Slow Cooker Sandwiches

I am sorry to be on such a slow cooker kick lately! With the weather being so beautiful, I have taken full advantage of the “set it and forget it” crockpot.

Plop it in, go have fun outside with the kiddos, and come home to a mouth watering meal, without a hot kitchen…..does it get much better?

These sandwiches are AWESOME. I adapted them from a recipe I found on Pinterest over at Big Red Kitchen

You can tailor them to your liking and are easy to make vegetarian. So mix and match and just have fun with these.

Slow Cooker Sandwiches

Here is what you need (makes about 6 LARGE sandwiches)
one round loaf bread ( I used Tuscan)
12-14 slices provolone
12-14 thinly sliced ham
12-14 slices of salami
banana pepper rings (well drained)
dried Italian seasoning

1. Slice bread 13 times, almost all the way through but leaving 1/2 inch space at the bottom.

2. Layer your 2 slice of each meat, cheese and peppers, sprinkle with Italian seasonings

and fold together.

3. Place meat and cheese bundles in between

Wrap loaf in aluminum foil and make sure it’s sealed tight.slices, creating 6 sandwiches. NOTE: some slices were smaller than others, so I was only able to fit 1 slice of each.

4. Ball up some aluminum foil (I did four small balls) and place in the crockpot for the sandwich bundle to sit on, up off the water.

Add 1 cup of water to the crock pot and place sandwich bundle on top of aluminum balls.

5. Cook on low for 3-4 hours.

6. When done, cut up into sandwiches and enjoy! Serve right away, the bread will dry out if you wait too long to serve.

This little lady REALLY enjoyed these sammies!
Hope you enjoy! XO Corey
