Easy Homemade Vegetable Soup

Having a hard time figuring out what to do with all those fresh vegetables popping up in your garden? Boy do I have a recipe for you!

This soup has been a family favorite since the girls were babies, eating finger foods :) I love how many veggies are packed in this super simple soup. It is also a great one to freeze for a later date :)

Here is what you need:

- 32 oz vegetable or chicken broth
- 1 cup of chopped carrots
- 1 onion, diced
- 1 large potato, cubed
- 3 cloves of garlic, minced
- 2 cups of frozen broccoli
- 2 cups of frozen green beans
- 1 can of garbanzo beans
- 1 can of diced tomatoes
- 3 cups of V8
- 2 or 3 bay leaves
- 1 tbsp Italian seasoning
- 2 tbsp olive oil.

PS… once the zucchini start popping up in my garden, I will be adding those to this recipe as well. So if you have some on hand, feel free to add some!
