Crockpot Chicken Cacciatore

Crockpot Chicken Cacciatore Recipe served over pasta, on a white plate

This weekend, my Mother-in-Law invited us to a fun indoor garden exhibit. This would leave me away from the kitchen for most of the day, so I thought this would be the perfect time to try out a new Crockpot Chicken Cacciatore recipe I had been working on.

When we arrived home, the house smelled amazing! The girls and I couldn’t wait to try this yummy meal. (What about poor Darryl? Don’t worry. I made a vegetarian version for my hubby using his Morningstar Chikin Strips)

We all really loved this one, and I immediately filed it under  Family Favorites. The girls kept referring to this meal as the best spaghetti and meatballs.

(NOTE: The second time I made this, I only had chicken breasts on hand and that also tasted great! The vegetarian Morningstar Chikin Strips worked great for vegetarian option)

How to make Crockpot Chicken Cacciatore

  1. Start by seasoning chicken well with salt and pepper. Chicken placed in bottom of crockpot and topped with seasoning
  2. Add the rest of ingredients EXCEPT for the pasta. Stir well to combine.Chicken topped with fresh bell peppers, onions and seasoning and sauce
  3. Cover and set crockpot on LOW for 6-7 hours or on HIGH for 3-4 hours.cooked chicken cacciatore in crockpot

How to make Crockpot Chicken Cacciatore

Do you need a healthy family dinner that will cook itself? This Crockpot Chicken Cacciatore became and instant HEALTHY family favorite at my house.
Prep Time 10 minutes
Cook Time 6 hours

Ingredients
 

  • 1.5 lbs boneless skinless chicken thighs
  • 3-4 garlic cloves minced
  • 28 oz diced tomatoes
  • 6 oz tomato paste
  • 1/2 red bell pepper thinly sliced
  • 1/2 green bell pepper  thinly sliced
  • 1 small onion diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 1/4 cup water
  • 1 package of your favorite pasta prepared as directed on box

Instructions

    2. I’m actually making this today…. looks so good. I’m cooking it for 4 hrs… the only thing I’m concerned with is the chicken…. put it in with other ingredients uncooked?

  3. This looks great! Put it in the crock this morning. I am a vegetarian and my family is not. How do you prep this dish for both? Do you just spoon some over the morning star strips or use a tiny crock? Just curious. Thanks.

    1. I actually have 2 crockpots just for this purpose…..so I can cook both at the same time. If you don’t have 2, I like your idea of spoon some of the sauce over the strips. If possible, you want to try to cook the strips in the sauce for a bit. So you could also put some in a small pot and simmer, covered for 15 minutes to get some of the flavor infused into the veggie meat.

  4. I made this for tonight’s dinner and it was delicious. I did change it a bit. I didn’t have bell peppers so I put some zucchini 20 min. before serving. I also skipped the basil since I didn’t have any of that either. The pasta seemed to not be able to absorb all that great juice, so I actually made some polenta to go with it. It was fantastic. Thanks for the recipe!

  5. Made this tonight. Very good! I would have liked the sauce a little thicker. Should I have used fresh tomatoes instead of canned?

  6. I made this for dinner last night. I got a late start, so I cooked it on high for about four hours. My house smelled amazing!!! While my pasta was cooking, I removed the lid from the pot so it could thicken a bit (not sure if that made a difference). It was really good and so easy. The one thing I did different is that I used no-salt added tomatoes. If using regular canned tomatoes, I can’t see adding any additional salt, it would have been too salty for us. My son wasn’t a fan of the veggie chunks, so next time I will use petite diced tomatoes and finely chopped bell peppers and onions.

  8. Girl…I got this going on for tomorrow morning. I had assembled it and put the crock in the refrigerator — and i’ll takeout the crock and put it on before I leave for work. There is a cold front coming through tomrrow by dinner time…and if i have to drive in the cold rain …the bestthing to do is to come home to this.

    In another smaller crock, my adult son put together crock pot BBQ chicken for himself.

    This weekend will be deliciously warm.
