OMG Corey!!!!! This is genius!!!! We are so trying these! Just another tip for those who don’t normally eat them…the best time to buy great artichokes in in August. Also when picking them out give them a squeeze. You want to pick out the ones that are fat and round. They are the best. Just like everything there is a male version and a female version of artichokes. Crazy I know but if you can find the female versions they are more succulent!!! Can’t wait to try this!!!!

    1. Hahaha! I never knew that! So funny 🙂 Gotta go stock up on some female artichokes! hehe

When to buy artichokes depends on their origin. I’m in south Texas now and August is good. But on the West coast April-May is best. And don’t be put off by outer leaves that are “frost kissed” – kinda dark and rough looking – if it is not shriveled it may be one of the best. Love the idea of cooking them in a crockpot! Can’t wait to give that a shot. Thx for the recipe!

  2. Anything with the word crockpot in it and artichokes and I have to click on it haha. This looks so yummy and healthy. I’m going to have to give this a try soon 🙂

    1. Hahaha! I totally agree 🙂 I hope you give it a try and love it Leslie 🙂 XO

    1. Great Charise! I can’t wait to hear how you like them 🙂 XO

  3. I wanna try this tonight but I only have chicken broth?! think it’ll work?! sounds so yummy!

  4. Would it still be 3-4 hours if I was only cooking 2 artichokes?

    1. Arianne, I have never made only 2 artichokes before. Sorry 🙂 What I would try is cooking for 2-3 hours.

  5. I see you cooked it on HIGH for 3 hours. I can’t get home to turn it on for that short of time. Do you think they would work on LOW for 6 hours? Or will that shrivel them up too much?

    1. I have done them on low for 5 hours before. Do you have a timer, so it could shut off after 5 hours?

  6. I have always made my artichokes in a pressure cooker. These look amazing and I am definitely going to try them! Thank You for the recipe! Cheers =)

  7. We like the small artichokes. Can you suggest how to adjust the cooking time? I would be cooking about 9 to 12 small ones. Also can they be cooked on low? Thanks, looking forward to trying this!

  8. Only 2 cups of liquid (broth) for 3 hours on high?

Won’t the broth evaporate before time is up?

Thanks for the recipe share. I got this one in my recipe collection and going to try it out in 3 days.

    1. Nope, You should still have some liquid by the end. It’s only used to steam the artichokes 🙂

      1. Wow?!?!? Amazing that there is still going to be some broth left over. Thanks for responding.

I am trying this recipe out this Saturday.

  9. Well tried them two days ago, followed the recipe perfectly and it was a disaster.

The store only had the really small artichokes or jumbo ones and the small ones looked sickly so I went with the healthier bigger artichokes and there are posts here and from the original recipe poster that using the bigger ones would be OK. Not for me.

4 hours later the leafs were still mainly raw and uncooked… I transferred them to the boiler and like an idiot forgot about the olive oil I added to the artichokes originally and put more oil in the water (very little) but the artichokes came out oily and into the trash.

Not sure how this would even work with medium sized artichokes… Definitely will stick to boiling artichokes in the future.

    1. I am so sorry this didn’t work out for you Mo. As you can see from the pictures I felt like my artichokes were pretty large, and you can tell by the finished product, any longer in the crockpot would have cause them to over cook. Did you cook them on HIGH? I don’t see how any vegetable you put in a slow cooker for 4 hours on HIGH could come out raw. Hmmmm. What size crockpot did you use?

      1. Hi Corey!

Yes it was on high and I have a 6 quart crockpot that is not that old, maybe not even a year and it is an excellent crockpot.

Yeah Corey the artichokes I had were large, I could only stuff 3 in a 6 quart crockpot. I don’t normally like the jumbo sized and stick to the medium-sized. The smaller ones are to small cause I LOVE artichokes.

I was on a time crunch running around getting dinner groceries and didn’t have an opportunity to go store-to-store looking for medium sized artichokes. Had to take what I could at first store I was at, which usually has the multi-sized artichokes. I looked at the size of them and thought they were from Texas LOL. Luckily I had candied baby carrots as a back up to crockpot braised short ribs and au gratin potatoes.

        Thoughts?

        1. Oh my WORD! I have never seen artichokes THAT big. I considered the ones I used to be large, and I was able to get 5 in my 6qt. I guess if your artichokes were that big, they might not cook as fast. Sorry again that this didn’t work out for you. I wish you could have tried it with normal sized chokes 🙂 I really think you would have loved it! Oh well.
