Easter Egg Quesadilla

Quesadilla shaped and decorated like an Easter Egg

Here is a fun and easy Easter meal you can make for the little ones.  Better yet, have your little ones help decorate their own Easter Egg Quesadilla with their favorite Mexican toppers.

For this round, we used a plain cheese quesadilla (so vegetarian daddy could eat the leftovers), but have fun adding in chicken, steak, beans or veggies.  As for toppings, we used sour cream, guacamole, black olives and salsa.

If someone is not fond of one of those items, feel free to switch out for something they like. Try cheese sauce, corn, black bean dip, hummus or sliced avocado.

Easter Egg Quesadilla 

  • 1 large prepared quesadilla, cut into an egg shape
  • 2-3 TBSP guacamole
  • 2 TBSP sour cream
  • 2 TBSP mild salsa
  • 2-3 large black olives, sliced
  • 3-4 plastic sandwich bags
  1. Once you have prepared your quesadilla, let cool slightly and cut into an egg shape. Fill separate sandwich bags with toppers. One with guacamole, one with sour cream and one with salsa.
  2. Cut off the very end of the sandwich bag, to make a piping bag to decorate with. sour cream and guacamole in ziplock bags
  3. Design the top of your egg with the toppers.squeezing guacamole out of ziplock back, making wavy lines on quesadilla
  4. Serve right away. Yum!A fun Easter snack the whole family will love!
