Thanksgiving is over. The fridge is OVERFLOWING with turkey, stuffing, casseroles and more.  Don’t let those Thanksgiving leftovers  overwhelm you!

We can all agree…. turkey sandwiches are fine and dandy for the first couple days, but those can get boring fast! So, I’ve gather some of my favorite recipes to use up the leftovers in creative and YUMMY ways.

    Hi Corey–mashed potato croquettes? You mean there would be leftover mashed potatoes? Amazing! And thanks to your pumpkin pie smoothie there was no pumpkin pie to be made, since it had all gone into the blender rather than the oven. In fact I am firing up the oven to bake another fresh pumpkin this afternoon to replenish the stock 🙂 (Canned pumpkin is imported here, so it’s cheaper to bake a fresh one). The enchiladas are totally tempting… they look delicious! Course mie would be vegetarian, but thanks to this post you just redirected some pintos and black beans on the stove that were destined for a tamale pie into enchiladas… hey, can’t let the cheddar cheese go bad (especially when it’s imported too!) Happy holidays!
