Now that fall is here, I have soup on the mind NON-STOP. It’s one of my family’s go to comfort foods. As you know, my favorite way to make soup is in the crockpot.

What can I say, I’m a set-it and forget-it kinda gal 🙂

What makes this The Best Crockpot Minestrone Soup? The flavor is spot-on and check out the obscene amount of veggies packed into this bad boy. I mean look at this bowl of goodness. Yum!

The Best Crockpot Minestrone Soup

  • 1 can (14.5 oz) diced tomatoes
  • 2 cups carrots, chopped
  • 2 cups potatoes, chopped
  • 1.5 cups celery, chopped
  • 1 white onion, diced
  • 3-4 cloves garlic, minced
  • 1 Tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 bay leaves
  • 4 cups vegetable stock ( I prefer low sodium broth)
  • 2 cups water
  • 3 cups V8 ( or tomato juice)
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) cannellii beans, drained and rinsed
  • 1½ cups zucchini, diced
  • 1  cups tubular (ditalini) pasta
  • 1 can (15 oz) green beans, drained

Directions:

  1. Place your diced tomatoes, carrots, potatoes, celery, white onion, garlic, Italian seasoning, salt, pepper, bay leaves into your crockpot.Crockpot Minestrone Soup - Ingredients in crockpot
  2. Add in vegetable stock, water, and V8. Cover and cook on LOW for  6-8 hours or 3-4 hours on HIGH.The Best Crockpot Minestrone Soup - Stirring ingredients in slow-cooker

Ingredients
 

  • 1 can 14.5 oz diced tomatoes
  • 2 cups carrots chopped
  • 2 cups potatoes chopped
  • 1.5 cups celery chopped
  • 1 white onion diced
  • 3-4 cloves garlic minced
  • 1 Tablespoon Italian seasoning

    This recipe looks great. Although I know minestrone soup doesn’t have any meat and prefer it that way my guys (hubby and son) will not go for it or insist I make a meat to complete the meal on the side. Do you think adding a meat to this recipe would work and what would you suggest? I was leaning towards maybe adding beef stew meat, my concern is taking a good minestrone and just ending up with beef vegetable soup instead. Thanks again for another great recipe.

    1. Ground Italian sausage sounds about right

      Love this recipe! I cube a small pork tenderloin and toss it in. Easy & delish!

  2. My hubs is picky about noodles and their level of “mushiness”. If I were to cook the noodles separately to ensure his “al dente” standards were met, would I remove the 2 cups water from the crock?

    1. I wouldn’t cut out all of the water, maybe just remove 1 cup.

    Aha! This is going into the slow cooker tomorrow morning for Sunday dinner! Knew you’d have a great crock pot idea. DD loves tomato-based soups too. Corey, do you know what I did the other day? I used my mini crock to soak some dried beans overnight, then cooked them while I was at work. In the evening they were ready for dinner, in the perfect portion size. So I’m going to set up the mini crock tonight for tomorrow’s minestrone too 🙂 Thanks for this vegetarian recipe!

  5. But the big question is, as i always have with crockpot recipes…. what size is you crockpot?! I am not sureif mine is big enough….

      I am using a 8-9 quart crock pot and it is almost 3/4 full, I have not added the beans, pasta or zucchini yet, I don’t see how a 6 quart crock would work. Been on LOW for a couple of hours and smells yummy.

        1. Update: This was delicious. I added a pound of Italian sausage. It was done in 7 1/2 hours, then after adding the beans and zucchini and pasta, another hour on low worked fine. Best minestrone I ever had. Fit nicely in my 8 quart crock pot.

      2. I am doing the same thing the zucchini is in there but not the pasta,and beans! Its almost full too. I have it on high, and waiting til zucchini cooked. I boiled the pasta separate… Does smell good. My family is going to say “here we go again, more soup!” LOL ( I have been making a lot of soup lately since I am dieting!)

    Oh my goodness! I found this just putting crockpot minestrone soup in my search engine! It was so yummy! My whole family liked it. Even my veggie haters! Thank you. I also made the chedder pull apart biscuits to go with it. Perfect December meal.

    I ‘tried’ making this yesterday. It came out, well, I don’t want to be negative, but it came out pretty bad. I started it at 10am on low. I followed your directions to a T. I had a feeling the last step the red kidney beans, cannelli beans, zucchini, green beans wouldn’t been done after 15 minutes. I added them at about 4pm. At 4:30, I added the pasta. That’s when the checked the potatoes. They weren’t even done. I had to turn everything up on HIGH until 8pm. All the beans weren’t done, the potatoes were still not done and the pasta was now mush. Today (Monday) I finally tasted it and it looked more like a stew than a soup because everything got soaked up. I’m sooo bummed. Unfortunately, I will be throwing this out (HUGE waste) and I will not make this again.

    1. Danielle, I am sorry you did not like the soup, but it sounds like you might have used dried beans instead of canned? The canned beans are already cooked, so all they need is a quick heating in the soup. You might have also cut the potatoes a little too thick if they were not done yet. Sounds like you had the pasta in there for 3.5 hours? That is way too long for pasta and yes, it would turn to mush at that point. I hope you give this soup another try sometime using the canned beans 🙂 It really is yummy!

        Hi Corey. I did use canned beans. And the potatoes were cut pretty small. 🙁 The only reason why I had the crockpot on for a longer time than I had planned is because the beans and potatoes weren’t cooked. If I decide to make this again, I’ll make the pasta by itself so it doesn’t turn to mush and soak up all the liquid. Maybe that would help. Thank you for responding back to me.

        1. I am sorry again this didn’t work out for you. I am still confused about the beans though… canned beans are already cooked, so you aren’t really cooking them in the slow cooker…. just heating them up in the hot liquid quickly. Next time I would suggest maybe cutting the potatoes smaller. Some crockpots do run cooler than others, so that might have also been the case. Your crockpot might work better using the low setting for longer. I wish I could be more help Danielle, as you are the first I have heard of not having veggies cook through.           1. This sounds delicious, i will be making for sure!. I was just wondering what I could use to add a little heat to it? and did anyone find it a little watery or lack of flavour? what did you do to take the tomato flav up a notch??

        2. I’ve made minestrone many times. Don’t add the pasta until the minestrone is done. I add it 10 minutes or so before I’m gonna turn it off and the pasta continues to cook from the hot soup. Also, I don’t add more than 3/4 cup of pasta because it really expands. This recipe is very similar to mine, with exception to the potatoes. I am going to try adding potatoes to mine to make it more filling.

        I really wanted to love this soup! It’s smells and tastes good, however, after 4 hours on high I added the beans, green beans, zucchini and pasta and it took an hour for the pasta to get tender and the potatoes, carrots, celery and zucchini are crunchy. Frustrated because I can’t cook any longer or the pasta will be mush. 🙁

      3. Loved the recipe idea and the idea of getting all thise veggies in my kids but…….I had the same result. None of my fresh vegetables were cooked after 8 hours in the crockpot. Pasta ended up mushy after I had to extend the cooking time. Dinner was a disaster that night. Bowl of undercooked veggies and mushy pasta.

        1. WOW! Your crockpot must run REALLY cool. 8 hours in a crockpot should soften any veggie. Maybe try your crockpot on HIGH next time?

      Perhaps you were trying to do it in too small of a crockpot? I have 6.5 quart cuisinart slow cooker and it was pretty full. It took about 4 hours and 15 minutes for the veggies to be fully cooked and softened. I was a little worried at how slow (ironic in a slow cooker I know!) it was cooking but it was very full so I think it look longer for everything to fully cook. Just like drying clothes in the dryer – if its too full it will take longer.

      I had this with an old slow cooker years ago. It turned out it wasnt working correctly, likely thermostat had gone. Buy a new one, cos this recipe works every time. Xx

    I’m with Danielle. I’m trying this today and the potatoes, carrots and celery are still hard after 4 hours on high. Trying to boil on the stove to soften the veggies. Maybe I’ll get to eat sometime tonight…
