Easy Salmon Foil Packets

salmon, green beans, garlic slices and a brown sauce in a bowl - sitting on aluminum foil

According to Time magazine, one of the most common New Year’s resolutions is to eat healthier. Unfortunately, it’s also one of the quickest resolutions to be broken.

The authors think it’s because people go overboard. So many of us think that eating healthy means giving up their favorite treats for good, and who could stick to that? But I think there’s another reason too. A lot of people think cooking healthy meals is hard work. You know, skinning the chicken, mixing up low-fat dressings, weighing out your portions-it all sounds so complicated.

Wanna know the good news? It doesn’t have to be!

These Easy Salmon Foil Packets are incredibly simple.  Just rub the fish with sauce, top it with garlic and green beans, and bake. In fact, it’s so easy, even my daughters can cook it (well, with a little help from Mom). See?

So this meal is actually a three-fer: it’s easy, it’s healthy, and it’s a good way to get the kids involved in the kitchen. And what kids help cook, they’re a lot more likely to eat.

I was actually worried that my youngest wouldn’t like the dish, since she has turned her nose up at salmon a couple times. But after getting to help “paint the fish” with the sauce and assemble her own yummy packet, she ended up loving it.)

  1. Wow! I have been wanting to find a recipe for salmon that isn’t too over-the-top but delicious anyway… My hubby loves salmon…This looks like just the one for me to try. Thank you Corey!

    1. Can the salmon be frozen?

      1. I have not tried frozen yet Karina, but I think that would work. You will want to cook it a little longer perhaps.

Thank you Corey for this family cooking inspiration! Our #3 will be coming any time now and there are going to be dinners when I have absolutely no energy for making dinner, even on maternity leave. I can’t serve spaghetti every night the slow cooker isn’t in use either. How to keep my preschoolers and husband (all meat eaters) fed, include my kiddos in dinner prep for some family time, and serve a healthy meal? Solved! THANKS!

  4. Can Frozen green beans be used?

    1. Yes Hope! We sure frozen all the time. 🙂

We love this recipe! Made it twice the first week, subbing asparagus for green beans, which works perfectly, by the way! Thanks for the great idea. I’m signing up now!

  6. My husband and toddler are not fond of green beans, are there any other veggie options? Thanks.
