Summer is the perfect time for seafood. In hot weather, no one’s in the mood for heavy stews and roasts. Lighter fare, like grilled fish or shrimp kabob, fits the season much better. And it makes a great complement for all those fresh veggies coming out of the garden.

One of the nice things about seafood is how versatile it is. It fits in perfectly at any gathering, from a casual cookout to a chic wedding reception. And there are dozens of different ways to cook it: on the grill, breaded and fried, on a skewer, in a salad…the possibilities are endless.

Here’s a little number I cooked up featuring SeaPak’s popcorn shrimp. These little delights are incredibly easy to work with. They come ready-breaded and frozen, so all they need is a quick dip in hot oil or ten minutes in the oven. And while they’re baking, you can use the time to whip up the creamy Sriracha sauce that gives this dish its special kick.

Then, once the shrimp are ready, just sandwich them between tortillas with a generous sprinkling of shredded cheese and fry them up until they’re nice and golden. Then all they need is a good drizzle with the creamy Sriracha sauce to turn them from just shrimp quesadilla into Firecracker Shrimp Quesadillas. You can even add a little extra Sriracha if you like a LOT of fire.

The fabulous brand partners,  SeaPak and Thirty-One Gifts are offering a killer giveaway! One lucky Family Fresh Meals reader will receive a Navy Anchor Canvas Crew Tote and FREE SeaPak product coupons. Keep reading to see how to enter!

Meet the Margaritaville® Bali™ Frozen Concoction Maker® with Self Dispenser. Isn’t she purrrrdy? When I was asked to review this product, I jumped at the opportunity. Summertime and frozen drinks go together like pina and colata… I’m I right?

Margaritaville® Bali™ Frozen Concoction Maker

I have to start by saying home much I LOVE this machine. The first thing I worried about was the clean-up. With some other kitchen appliances (like my juicer, ugh) clean-up can be the pits! Not with Margaritaville Bali. I was pleasantly surprised at how easy it was to assemble, and clean up.

Not a fan of Margaritas? No problem. This beauty makes smoothies, coladas and daiquiris. Happy Dance!

I know what your are thinking, how the heck does this thing work, and how hard is it to use? It really is as easy as 1, 2, 3!

1. First you add ice to the top compartment.

Margaritaville Bali - Step 1

2. Pour your liquids and fruits if you are making a smoothie,  pick your drink setting and push go!

Margaritaville® Bali™ Frozen Concoction Maker - Steps 2-4

And the best part? The self-dispenser fills a glass with great frozen drinks with the press of the lever, no bartender needed.  PLUS, the auto-refresh feature creates a perfectly blended drink every time.

Not having a big gathering? Settings can be programmed to mix either half-chamber or full-chamber batch sizes. Love that for when it’s just Darryl and me!

You know, dads don’t get enough credit. There are like a million songs about mothers—some happy, some sappy, and some funny—but can you think of even one about fathers?

It’s time to give some props to Dad. The guy who changed your diapers…taught you to tie your shoes…helped you with your homework…sternly vetted all your dates throughout high school…took a million photos at your graduation…walked you down the aisle.

So show Dad some love this Father’s Day with a feast of his favorite foods. Start off with a nice appetizer like a beer dip or meatballs…then move on to a juicy steak or some ribs…and top it all off with a cake to make the occasion special.

For all you do, Dad…thank you. Here are 25 Father’s Day Favorites for you to share!

Nothing says summer like BBQ!

Cheesy BBQ Pulled Pork Dip - FamilyFreshMeals.comThis post has been brought to you by Byron’s BBQ

Summertime is here, and summertime means BBQ. Nothing goes better with a summer evening than a few friends gathered on the deck, some cold drinks, and some smoky pulled pork.

Unfortunately, summertime also means being busy, busy, busy. The kids are out of school, so you have to run after them while still finding time for work and laundry and all that other stuff you have to do. And the nice weather means you really want to have some time for fun and hanging out, too. With all that going on, who has time to smoke a pork shoulder?

Once again, the folks at Byron’s BBQ have come to the rescue. Their all-natural, slow-smoked pulled pork, slathered in spicy-sweet sauce, comes in a handy package that you can just pull right out of the freezer and cook up any way you like.

Cheesy BBQ Pulled Pork Dip - Enjoy!

Here’s my latest twist on the BBQ theme: a Cheesy Pulled Pork BBQ Dip. You just mix in some prepared Byron’s BBQ Pork with sour cream, cream cheese, garlic salt, and shredded cheese, and bake the whole thing for 15 to 20 minutes. That’s it! No messing around with a smoker and wood chips and matches and whatnot. Just let it bake while you kick back with a nice cold drink, and then pull it out and serve it with your favorite chips, pita bread or veggies!

Then call your friends to gather round, because your perfect backyard bash is ready to start.

You can find Byron’s Pork BBQ exclusively at your nearest Sam’s Club. Use this handy Sam’s Club Store Locator to find your closest store!

3. Place pork mixture into a baking dish and sprinkle with remaining cup of cheese.

Bacon Wrapped Cinnamon Rolls - FamilyFreshMeals.com

In life, there’s a time for everything.

There’s a time to be healthy and virtuous—to lunch on green salad, snack on fresh fruit, dine on sautéed kale. And hey, that doesn’t have to be a sacrifice. There are lots of recipes for light, healthy, veggie-packed meals that actually taste good, on this site and on lots of other food sites.

But sometimes—just sometimes—you get tired of being good. Once in a while, you want to be completely hedonistic. To eat something that no one ever claimed is good for you, but that tastes utterly fabulous. Something like fresh cinnamon rolls. Or bacon.

Or…fresh cinnamon rolls AND bacon.

Bacon Wrapped Cinnamon Rolls - Enjoy!

Yes, this is probably the height of self-indulgence: a cinnamon roll with bacon baked right in. Just like my salted caramel smoothie, this recipe has that magical pairing of salty and sweet that’s so much more than the sum of its parts.

The smoky bacon, melting into the chewy flesh of the cinnamon roll, all topped with that sweet drizzle of icing…it all blends into a single glorious, indulgent, totally non-virtuous treat.
No, it’s not health food. But if you’re going to be bad, you might as well make the most of it.

A decadent dish that only take minutes to makes!

Cajun Mac and Cheese - Family Fresh Meals --

This recipe has it all. Creamy pasta with the cajun POP of Andouille sausage and bell peppers. AND… you won’t get over how easy it is to make . Now I can’t take credit for this absolutely delicious recipe. This Cajun Mac and Cheese is one of the 113 great-tasting, easy-to-make recipes you can find in The Dairy Good Cookbook: Everyday Comfort Food from America’s Dairy Farm Families.

Cajun Mac and Cheese - The Dairy Good Cookbook

This wonderful cookbook celebrates American’s dairy farmers who work hard to bring us delicious and versatile dairy foods! It showcases the unique tastes and versatility of dairy – from cheese and yogurt to milk and butter. The book celebrates the nation’s more than 47,000 dairy farm families and their contributions to our American life.

Each chapter showcases one of six different types of dairy cows and profiles real-life dairy farm families from across the country who work hard every day to provide you with fresh, wholesome and nutritious milk and other dairy products. I loved reading about the Lucas and Alise Sjostrom, who left their big city jobs to chase their dreams of dairy farming. The Dairy Good Cookbook reconnects people with the people who produce their food.

The Dairy Good Cookbook is available nationwide wherever books are sold and you can purchase online atAmazon.com,Barnes and Noble, andIndie Bound. And visit DairyGood.org to learn more about the goodness of dairy foods and the farmers who bring them to us.Now onto the recipe!

Enjoy Being Good™

…with snacks from Good Health®.

On the Go Snack Lunches - Family Fresh Meals --

Let’s face it—it’s not easy being a busy mom. Sure, I want my kids to have the best, healthiest food I can give them. If I could, I’d sit them down every day for a hot lunch with all five basic food groups. But hello, welcome to the real world.

Our whole family is always on the go. School, sporting events, trips to the park and to the zoo…there are too many times when a sit-down meal just isn’t practical. We need food that can keep up with us and our busy lifestyle.

On the Go Snack Lunches - Enjoy! FamilyFreshMeals.com -

On top of that, healthy foods aren’t always the most tempting, especially for kids. I’ve never seen a kiddo get really excited about finding carrot and celery sticks in their lunch box. Sure, there are ways to make fruit and vegetables more exciting, but they take extra time. Did I mention I don’t always have a whole lot of that?

And so it’s tempting to just give in and say, okay, maybe a little junk food isn’t so bad. Maybe it’s not the end of the world if I slip a snack cake instead of fruit salad.

Fortunately, there’s a better choice. Thanks to the folks at Good Health® I can give my kids snacks that I can actually feel good about. Snacks with simple, wholesome ingredients: chips cooked in heart-healthy olive or avocado oil, apple chips, veggie chips. Tasty, healthier choices that are easy to take with them…and that I know will actually be eaten when they get to where they’re going.

On the Go Snack Lunches - Cracked Pepper Chips

So the next time I’m having a busy morning, instead of grabbing a bag of salt, fat, and unpronounceable chemicals, I can fill up the extra space in a lunch box with a pile of crunchy Veggie Straws…or delicious Olive Oil Rosemary Kettle Chips…or spicy Half Naked™ Wild Buffalo Blue Popcorn.

And instead of feeling guilty all day about feeding my kids processed food, I can feel good knowing they’re going to school with a healthier snack that they’ll actually enjoy. Helping my kids Join the Good Life just got a little easier. And at $1-$2 for small bags and $3-$5 for large bags, they’re totally affordable!

On the Go Snack Lunches - Love this popcorn for on the go!

Three cheers for the red, white, and blue!

Easy Flag Fruit Dessert - Family Fresh Meals

Ever notice how the patriotic holidays all come together? You get Memorial Day at the end of May, then Flag Day in mid-June, and then the Glorious Fourth at the beginning of July. Maybe it’s because the weather is just so nice this time of year, it seems like we need plenty of occasions for cookouts.

Or, on the other hand, maybe it’s because summertime means summer fruits: juicy red strawberries, ripe raspberries, blushing cherries, and plump blueberries. All that red and blue bounty just naturally suggests the idea of an American flag. But…how do you make the white stripes?

Easy Flag Fruit Dessert - Family Fresh Meals --

Well, you could arrange the fruit on a white cake or make it into a parfait, but I’ve got an idea that’s way easier. All you need is the fresh fruit, a big tray, and some little pretzels covered in yogurt or white chocolate. Just spread those out in rows, alternating with the red berries, and group all the blueberries together in the corner. And presto: a light, easy, festive dessert that will be the hit of any patriotic party.

Easy Flag Fruit Dessert

Ingredients:

5-6 cups of red fresh fruit. (I used cherries, strawberries and raspberries)

2 cups of blueberries

3 cups of yogurt or white chocolate covered pretzels

Directions:

Wash fresh fruit and dry. Lay out fruit and pretzels to represent the flag stripes, and place a small bowl of blueberries on the top left.

And the great thing about having all those holidays in a row is, you get three chances to show it off.

Did you know that May is National BBQ Month?

Baked BBQ Pulled Pork Sandwiches - FamilyFreshMeals.com --This post has been brought to you by Byron’s BBQ

I didn’t, but it makes sense when you think about it. After all, Memorial Day weekend is sort of the official start of summer, and the starting flag for grilling season. And that long weekend is the perfect time for pulled pork, because you’ve got plenty of time to cook that shoulder nice and slow over a low fire until it just falls right off the bone.

The only problem is, what if it rains? Or what if you just can’t wait for the long weekend, because you want pulled pork NOW?

The folks at Byron’s BBQ have come to the rescue with an authentic pulled pork that comes right in a package. It’s smoked over an open hardwood fire, coated in a sweet and spicy sauce, and then frozen to preserve the flavor without a bunch of unpronounceable chemicals.

So Byron’s BBQ has done all the work for you, and all you have to do is defrost it and heat it up. And there are a ton of choices for that, too…regular oven, convection oven, slow cooker. Oh, and of course, you can still do it on the grill if the weather turns out to be nice after all.

Here’s my favorite way to serve this pulled pork: on buns, with sliced cheddar and some yummy caramelized onions. Just pop them in the oven for 10 to 15 minutes so the cheese melts over everything and turns it into a tender, smoky, meaty ball of delicious.

So if Memorial Day weekend is cold and wet, or you’re just too busy to spend all day over a grill, no problem. You can still enjoy a great cookout or picnic the easy way, with help from Byron’s Pork BBQ!
