Fiesta Rice Salad

small bowl filled with Fiesta Rice SaladIn all honesty, this recipe was at the bottom of the page of another recipe I was making. hehehe. It caught by eye, and I just happened to have EVERYTHING that the recipe called for 🙂 So I thought, why not!

I knew the girls love rice whenever I make it. Both of them won’t get out of my tomato garden in the summer. Little D would eat a whole bowl of guacamole if I let her. And corn….. my girls love corn!!! The only thing they hadn’t had before were the black beans.

The beautiful color of the salad really appealed to the girls. With her first bite, Big D gave me a thumbs up!! (where the heck was the camera!) This is a quick, easy salad that would go great with any meal.

How to make Fiesta Rice Salad

  1. In a small bowl, stir together lime juice, oil, salsa, cumin, and salt.
  2. In a large bowl, stir together rice and corn, breaking up any rice clumps.
  3. Pour lime juice mixture over rice mixture and stir well to coat.
  4. Add beans, tomatoes, scallions and toss gently. Just before serving, pit, peel and dice avocado and stir into salad. Sprinkle with cilantro if desired. Healthy, pretty to look at and Family Fresh. Yum yum yum!

Fiesta Rice Salad ( All You Magazine)

Ingredients
 

  • - 1/4 cup fresh lime juice about 4 limes
  • - 3 Tbsp olive oil
  • - 3 Tbsp tomato salso
  • - 1 tsp ground cumin
  • - 1/2 tsp salt
  • - 2 cups cooked rice white or brown
  • - 1 cup corn kernels
  • - 2 15 oz cans of black beans drained and rinsed
  • - 1 cup small cherry tomatoes halved
  • - 3 scallions thinly sliced
  • - 1 avocado
  • - 1 Tbsp . chopped cilantro optional

Instructions

  • In a small bowl, stir together lime juice, oil, salsa, cumin, and salt.
  • In a large bowl, stir together rice and corn, breaking up any rice clumps.
