Crockpot Sausage Tortellini Stew (with vegetarian version)

Crockpot Sausage Tortellini Stew served in a blue bowlFor those of you who have been following Family Fresh Meals since the beginning, this stew might look a little familiar to you. I decided to give this recipe a much needed make-over. Same amazing recipe, but prettier pictures 🙂

 Crockpot Sausage Tortellini Stew

  1. In a large skillet, heat oil over medium heat. Add sausage, onion and garlic. Saute until meat is browned & no longer pink.  Put sausage, tomatoes, green beans, chopped onion, Italian seasoning, basil, oregano, and minced garlic into crockpot.
  2. Stir and cover.  Cook on HIGH for 4-5 hours,  or LOW for 7-8 hours.Crockpot Sausage Tortellini Stew in a slow cooker
  3. When there is 20 minutes remaining, stir in tortellini and add 1 cup of water. Continue cooking, and serve when done!

Crockpot Sausage Tortellini Stew

Here is an easy meal the whole family will beg for! This Crockpot Sausage Tortellini Stew is easy, healthy and full of flavor.
Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes

Ingredients
 

  • -1 lb of Italian or turkey sausages or MorningStar Grillers Crumbles for vegetarian version
  • -28 oz canned tomatoes
  • -9oz frozen green beans
  • -1 large onion chopped
  • -1/2 tsp Italian seasoning
  • -9oz refrigerated cheese tortellini
  • -1 tbsp oregano
  • -1 tbsp basil
  • -3 cloves minced garlic
  • -tbsp olive oil

Instructions

  2. Sound delicious and I love slow cooker recipes. I only have frozen tortellini…do you think I should thaw and add it 20 minutes before it’s done or throw it in frozen at the beginning? I’ve seen some other recipes that use frozen and cook it for 5 hours…hmmm….thanks for the great recipe idea!
