Cheesy Pepperoni Bites (with vegetarian option)

Cheesy Pepperoni Bites served on a white plateI was looking back through some old Rachael Ray magazines and saw these Pizza Puffs. Yum! I knew I had seen a recipe like this one before and really wanted to try it.

I then remembered that Melissa’s Cuisine (love her recipes…make sure to check her site out!) had won Recipe of the Week with a similar recipe. Her Pizza Bites got a TON of votes.

Melissa’s recipe had a handful of ingredients that I didn’t have on hand, and I really like the idea of using fresh basil, so I decided to play around with the RR version.

Cheesy Pepperoni Bites

  1. Preheat oven to 375 degrees. Grease a 24-cup mini muffin pan. In a large bowl, mix together the flour and baking powder, whisk in the milk and egg.
  2. Next stir in the mozzarella.
  3. Finally, stir in the pepperoni and mix well. And let stand for 7-10 minutes.
  4. NOTE* For the vegetarian version, I removed 1/2 of the batter before adding the pepperoni, to make 12 no-meat bites 🙂
  5. Divide batter among the mini-muffin cups.  Bake until puffed and golden, 20 to 25 minutes.
  6. While waiting for the bites to bake, microwave the pizza sauce until warmed through. Stir in 1 Tablespoon of your fresh basil.  
  7. Sprinkle the puffs with the remaining 1 Tablespoon basil.  Serve the puffs with the pizza sauce for dipping.

  • 4 ounces turkey pepperoni chopped
  • 1/2 cup pizza sauce
  • 2 Tablespoons finely chopped fresh basil
