This one pot wonder is simply, wonderful.
The BEST Crockpot Lasagna Soup recipe!
My Mexican Lasagna is a great example of ways to switch it up. (FYI..it’s to die for, just sayin’)
Anywho, the other night while I was making my lasagna sauce, it HIT me! This would make an awesome soup! And what better way to cook a soup, then in the crockpot. Score! This one pot meal will be in our winter menu rotation, for sure!
Crockpot Lasagna Soup
- First mix together the can of tomatoes, and tomato paste in crockpot.
- Next add broth, beef, garlic, parsley, basil, onion, V8 and salt/pepper.
- Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours.
- When 30 minutes are left of cook time, add in the 1 cup of water and noodles. Stir to combine. Put lid back on and continue cooking for 30 minutes.
- NOTE: If you like your soup to have more liquid, feel free to add some extra broth and or water when you add the noodles.
- I served our soup with some shredded cheese. YUM!

Crockpot Lasagna Soup
Ingredients
- 1 lb ground beef, lean or vegetarian crumble
- 3 cups of beef broth or vegetable broth to make vegetarian
- 4-5 cloves of garlic minced
- 1 TB dried parsley
- 1 TB dried basil
- 1/2 cup chopped onion
- 1, 28 oz can of diced tomatoes
- 1, 6 oz can of tomato paste
- 1 cup V8 or any vegetable drink
- 2 cups uncooked shell pasta
- 1/4 tsp pepper
- 1/4 tsp salt
- 1 cup of water
- Optional topping- shredded cheese
Instructions
- NOTE about beef: The pictured meet is the vegetarian crumble... that is why it looks browned. You do NOT have to brown the beef before putting into the crock pot. I did not pre-cook the meat first. If you are using a higher fat ground beef (like an 80/20) you might want to precook to drain off some of the fat. But if you don’t mind the extra fat…that isn’t even necessary, just a suggestion.

I’m really sorry to say…..we hated this. I wanted to love it, and I feel badly saying it was awful because everyone came down on “Disappointed” several months ago. I’m certainly not trying to be mean or disrespectful, but I’m Italian–there is no way this tastes like lasagna. V-8 juice? Uncooked hamburg? My grandma would roll in her grave. Please don’t call this lasagna–I had to throw the whole pot of it out, it was that tasteless. Sorry!

Yes, because when you get to the end of the cooking cycle, the crockpot should be about the same temp. It will depend on what kind of noodles you use, and how thing they are. Just keep an eye on them towards the end.

Made this soup for dinner tonight! It was great. Made a few modifications; I used bulk Italian sausage instead of ground beef, browned and drained before adding. Left out the V8 juice, to cut down on the acid! In also added a can of white northern beans, rinsed and drained. I know you do not put beans in lasagna but it tasted really good. Sprinkled shaved parmessan cheese and served with a salad and dinner is served! It was a cold and snowy day today in Littleton, Colorado, so it was a great winter hot meal! Suzanne W.

I have not loaded the ingredients into a calorie counter, but I have heard that people do like the My Fitness Pal recipe builder. It will show you all the calories on there one you input the ingredients 🙂

I have been making this meal all winter for our busy family. Our problem is that with a family of 8, including four teenage boys, there is only one bowl each. If I wanted to stretch this without doubling it, how should I go about it? Thanks!

Heather, how about doing 1.5 (or even double) the recipe without the noodles. Cook the noodles separately, and then mix it all together at the end.

Hi Corey, can I give this six stars? Thank you ever so much for this recipe, it is hands-down my favourite crockpot recipe ever. I have made it so many times. I just chuck everything in, no sautéing the onions for extra flavour or anything special like that. It is marvelous with vegetarian mince/crumble but FYI TVP is a no-go, even when rehydrated with bouillon. We eat it with whole wheat spirelli. I have my 30th or so rendition of this in the slow cooker now, with a massive summer courgette and two carrots added like a primavera sauce since I am feeding my toddlers tonight and am pregnant so everyone benefits from the extra vegetables (and my crisper drawer does too). Whenever I want to use my slow cooker, this is the recipe I can’t wait to make. I owe you so much from how much you saved our family budget by not buying pre-made Quorn lasagne, and not eating all of the cheese and white sauce calories too. This is the only Italian cuisine item that I make faithfully. It is so good. Merci beaucoup and hartelijk bedankt from Brussels!!

Have you ever tried this recipe as one of those ziplock freezer meals? Basically putting everything (except the pasta) in a freezer bag and then later taking it out the night before to defrost a bit in the fridge and then putting it in the crock pot in the morning? I’m wondering if this recipe would work as a freezer meal….Hmmm

I love lasagna. Love crockpot cooking as well. Lasagna has ricotta and parmesan cheese baked in as well, between layers of noodles, though. This recipe is more like beef-a-roni, not lasagna. ??? Where’s the ricotta cheese?

Tastes Like Lasagna Soup by Paula Deen is my go-to recipe when it comes to something like this. I liked this, but can’t see myself making it again after knowing about Paula Deen’s recipe. My kid gobbles hers down but I had to force her to finish her dinner tonight. =( What’s funny is Paula Deen’s has more veggies in it so I thought my kid would go for this because it is more plain.
Also, the only advantage of putting this in the crockpot is time (somewhat…because most recipes like this cook on the stuff in 30 min). Flavor-wise, there is no advantage.

The noodles turned out soggy and it wasn’t great. I would cook the noodles seperatly instead of in the sauce.

Wanted to love this but we just thought it needed more seasoning. Followed the recipe completely. Was nice and thick but tasted watered down. I have 4 kids and the one that doesn’t like lasagna actually liked it..lol. I will try again and use some italian seasoning maybe and the ricotta?

HI, I’ve done this twice now, and although it tastes great, I can’t seem to figure out how to make it that the noodles don’t go to complete mush. I’ve tried now with two different sizes, thinking the first size was too big, but it turns out the same, mushy.
Any tip?
It does taste fantastic though, husband devours it!

No it is 1 can of diced tomatoes. The can size I used was 28oz. So that would be over 800 milliliters.

This soup was wonderful. I did add some grated Parmesan cheese –needed to use it up–whole onion –I cooked it on low all night. It filled two 64 oz. plastic containers. I needed to share one with neighbor. A REAL KEEPER!!!

I’m making this now. It smells great! My question is, is it supposed to be super watery? I’m worried about adding the cup of water with the noodles because it’s so think to begin with? Lol Idk I’m on hour 4 of it on low

I made the same mistake as one of the reviewers above and threw in the pasta with everything else this morning. How do I salvage this? If I go home and stop the slow cooker after 5hrs of cooking on low, would the meat be done enough? I was thinking to myself that 8 hrs would make the pasta pretty mushy!!

So far this recipe smells amazing, and ingredients I already have at home. It’s been cooking in the crockpot for almost 5 hours on low. The instructions states to cook for a lil over 7 hours. It looks like the hamburger is cooked in the crock pot. Should I continue to cook it for two more hours or should I get ready to add the noodles? I didn’t know if it’s possible to overcook the meal before you add the noodles.

I made this tonight, I followed the recipe to a fault. I didn’t think it had much flavor to be honest. I spent another 10 minutes trying to fix the flavor with every spice in my cabinet but only after I gave it to my 9 year old who said: “It’s not like what I am used to you making, its not bad but I just don’t like it and it’s missing something, It is bland and has weak flavor” I don’t know what I could have done wrong, especially following the recipe as I did, but just not for my family and I.
PS: I have a Culinary Arts degree so I know my way around a kitchen and I just couldn’t figure out what it was missing to save my life.
Not horrible but not fantastic, it was okay.

I work night shift amy boyfriend works days…mi have been making crickpot meals so he has dinner and eats better than fast food…..left up to his own devices…wont cook. This also gives him leftovers for the next day for lunch….however I rarely get any when you ha to put stuff in at the end. Would love to put this together when I get home before going to sleep…that way I have stuff to take that nigjt for dinner at work…..soooo long story short…do you think it would be ok to add the noodles earlier? I know chicken noodle soup it os ok so figured this is kinda the Same thing….? Either way, cant wait to try this!

I made this last night and it was wonderful. I didn’t have tomato paste, so I just left it out, and I used veggie meatballs (I keep kosher, so I wanted to use cheese in it and you can’t mix milk and meat together when you keep kosher) and vegetable broth. My husband said it was one of the best dinners I have ever made. Thanks for a great recipe and for offering alternative vegetarian options to them as well!

I found this recipe on Pinterest. It is delicious! I accidentally bought chicken broth instead of beef broth, and it still turned out fine. I bought tomato juice instead of V8 (is there a difference?) and it was still good. My husband loved it and even ate the diced tomatoes (which he never does)! This is a great hearty soup for the winter months!
