Easy Crockpot Fajitas

Fajitas are the best aren’t they? Just wait until you try these Crockpot Fajitas.  Oh my goodness, they are so flipping good! The minimal prep will blow you away.  So, what are you waiting for?!

How to Make Easy Crockpot Fajitas

Ingredients:

  • 1 ½ lbs flank steak
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons soy sauce, preferably the low-sodium variety
  • 1 (7oz) can of green chilies
  • 4 cloves garlic, minced
  • 3 bell peppers, any color, cut into slices
  • 1 large onion, cut into slices

Directions

  1. Start by placing  1/2 of your onion slices on the bottom of the crockpot. Place flank steak on top of onions. (the onion ‘base” will keep the meat from drying out)
  2. Next, mix together the chili powder, cumin, paprika, salt and pepper. Sprinkle on top of the flank steak.
  3. Pour soy sauce over the top of the steak and season and spread minced garlic  evenly over top of meat.
  4. Top  with the rest of your sliced onions, green chilies and bell peppers. Cover and cook on HIGH for 5-6 hours until meat can easily be shredded with 2 forks.collage image showing onions in slow cooker, topped with beef, seasoning on top of beef and then topped with sliced peppers and onions

Easy Crockpot Fajitas

These Crockpot Fajitas have minimal prep and taste AMAZING. Literally set it and forget it. Perfect recipe for Cinco de Mayo.
Prep Time 10 minutes
Cook Time 5 hours

Ingredients

  5. I am going to try this with chicken rather then steak. Do they stay juicy with only the soy sauce as liquid? If i’m doing chicken, should I add in a little water? Thanks!!

    1. There will be less fat for sure to keep things moist. The onions and peppers will release some liquid, but you might want to add some water or broth to be on the safe side. Let me know how it turns out 😉

    OK so my 2 year old’s Dora fiesta party is this weekend and I want to double this recipe. Will you advise as to how much longer I should plan to cook this. I don’t want to mess up the fiesta food!!!! I’m looking at your cool ranch crockpot chicken also and wondering about the time if I double that one. Thank you so much!!

    1. I personally have never made a double batch of these, but if I were going to, I would up the cooking time by 1-2 more hours. (depending on if you are going to cook on HIGH or LOW) IS there anyway you could barrow a second crockpot and just have 2 going at once?

  7. Could you do this with chicken?

    1. Sure! But I would reduced the cooking time a little bit, since chicken tends to cook faster.

  8. Once the time is up…do you shred right in the crockpot with the veggies still in there or do you take veggies out then shred? My husband is going to love these.. In the crockpot right now!
