Hold onto your hats cowboys and cowgirls! This Cheesy Crockpot Cowboy Casserole is going to blow your mind. It’s hearty, full of flavor and takes only minutes to prepare.
It’s loaded with potatoes, beef (or vegetarian soy crumbles), beans and cheese. How the heck can you go wrong?! Make sure to PIN THIS recipe for your fall menu. Your family will thank you 🙂
Cheesy Crockpot Cowboy Casserole
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese
- Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
- Cover and cook on high for 4 hours or on low for 7-8 hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

- 1 cup canned corn drained
- 1 can dark red kidney beans drained
- 1 cup of shredded cheddar cheese

Hard to believe, but my kids do not like potatoes at all – any ideas on whether uncooked pasta would work? should I add a bit of chicken stock?

Hmmmm. I think I would just try serving it over cooked pasta then. I don’t know how the uncooked pasta would do in the mix. I hope that helps Laura!

Ok so I have no potatoes!! What about canned potatoes or potato tots?

I have never used those, but they should work out ok. If using canned potatoes, I would reduce the cooking time a little bit. As for tots, cook them separate and then serve them on top perhaps?

This was so yummy and so easy! I had to be out-of-town, so I threw all the ingredients in the crock (minus the beans and Mrs. Dash, as I didn’t have any) so that the rest of the family could have a meal ready. Everybody loved it! I ate mine early without the cheese and that was good too. This will be in the meal rotation, but I see it being especially comforting in the colder months! Thank you!

I just put this in the crock pot and i went to stir it all together only problem it seems really watery everything is drained and i used cream of chicken 1 can and lean pork instead of ground beef any ideas on how to thicken the watery base?bI also added carrots to this and refried beans!

I know the recipes says there will be no leftovers, but with only 2 in our household, there are several meals in this casserole. It is delicious.. It really is, but my question is…. since we have leftovers, can this be frozen without ruining the potatoes. I cut them very, very thin so I’m thinking it will be alright. Is it necessary to brown ground turkey or can I put it in raw? Is the browning done just to have a chance to drain off grease or is it unsafe to add raw turkey?

Two thumbs up! Turned out perfectly with frozen vegetarian crumble and 2 sweet potatoes plus 1/2 a red pepper since I had those ingredients on hand. Cheddar here is expensive so I used a micro-grater to put it just on top of the steaming bowls served up straight from the slow cooker. Going to have to double the recipe next time 🙂 I actually forgot to put in kidney beans and it was still nice, the next time I will add them. Thanks to Angela in her comments above this is on my freezer list for when my baby arrives.

I’m trying this, but I added rotel instead of diced tomatoes. Also added a poblano chili and a couple jalapeno’s. Hopefully it will come out good.

I’m making this right now! Only I’m using leftover pulled pork instead of ground beef, black beans instead of kidney beans and added some sliced black olives! Hope it turns out!

I am making it tonight already have all ingredients except cheese in my crock-pot wasn’t till I came back and read a few comments did I find out to drain beans. Used russet potatoes (that is all I had), and used cilantro, gsrlic, and a tiny bit of cumin in place of Mrs. Dash. A can of Ro-tel in place of the tomatoes. Family pronounced it good. Next time I may use black beans in place of kidney beans.

Red potatoes hold their form a little better in the crockpot. Any potato will work, they just won’t hold their shape as well. Still should taste great!

Love this recipe. Last time I made it I didn’t have potatoes so I cooked up some wagon wheel pasta separately to serve with it. Very good! Especially with cornbread. I’ll bet it would be good served with one of those microwavable bags of white or brown rice,too! My son likes to wrap the leftovers up in a tortilla! Very versatile recipe. Thanks!

I have made this for my family several times and they love it. For a little extra kick, add sausage to the meat (chorizo works well) and or use diced tomatoes with chipotle. My wife even asked me to make a pot of this for her office’s holiday carry-in.

I made this Saturday and it was great. Next time I make it I think I will add a bit more cheese because it enhanced the flavor. Bites without cheese were “missing something,” but with the cheese it hit all the notes. Thank you for the recipe, I will be making it again for sure.

Made this today… used a can of Rotel instead of plain diced tomatoes, and a heaping teaspoon of Trader Joes 21 Seasoning Salute in place of Ms Dash. I also browned the onion with the beef. This was really good! I think next time I might add some garlic (because who doesn’t love garlic?) and Velveeta chunks during cooking instead of cheese on top at the end. I also like the idea of doing cream of cheddar instead of cream of mushroom… mmmm, cheese!

Just threw this in the crockpot for dinner tonight. I added about a half can extra of cream of mushroom soup, red pepper flakes and chili powder. Also added a pinch of garlic and onion powder. Like a few other readers, I also used Rotel. It looks very hearty! Will update after dinner!

Honestly if you cut it super small, they cook down so much they are undetectable. BUT, if you really must leave them out, you could sub in onion powder. 🙂

Please explain “thin sliced potatoes”. I used my mandoline, crinkle cut all the potatoes 4.5mm thick. Right now, I am on 6 hrs, on high, and potatoes are still raw. Did I need to make potato chip thin?
