Hold onto your hats cowboys and cowgirls! This Cheesy Crockpot Cowboy Casserole is going to blow your mind. It’s hearty, full of flavor and takes only minutes to prepare.
It’s loaded with potatoes, beef (or vegetarian soy crumbles), beans and cheese. How the heck can you go wrong?! Make sure to PIN THIS recipe for your fall menu. Your family will thank you 🙂
Cheesy Crockpot Cowboy Casserole
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese
- Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
- Cover and cook on high for 4 hours or on low for 7-8 hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

- 1 cup canned corn drained
- 1 can dark red kidney beans drained
- 1 cup of shredded cheddar cheese

I loved it! It made 4 large servings for myself 🙂 Threw some extra cheese on top when heating leftovers. I have a friend that’s going to try it now too!
Only thing I’ll do different is drain some of the diced tomatoes. It was a bit liquidy when cooking so I occasionally scooped some liquid out.

Hi! Excited to try this. I am wondering if you think it would double well in a 6 qt crock pot? I do have 2 crock pots and can do it that way if I need to but would rather have less dishes. Thanks so much for your help!

1 and 1/2 of the recipe might fit… but doubling it in a 6qt might be too much. The crockpot I have in the picture is a 6qt, so you can see it is pretty full.

Hi! I have been making this life-saving recipe on and off for more than two years now. We ALL love it and seldom have leftovers. Recently we had company for supper that were strict vegetarians, so substituted differing beans instead of the hamburger. It turned out incredibly good and on low food budget months we often have it without meat and can barely notice! Thank you Corey!

Added mushrooms and peas for the mister and only had cream of chicken soup. Still yummy!! I work evenings so the slow cooker is my best friend! I cook all evening at work, come home and fill the crock pot! Thankfully the mister doesn’t mind!!!

Rather than use a bechamel sauce, I found a recipe for condensed cream of mushroom soup to use instead of the canned stuff. OMG! Now I have 2 wonderful recipes to add to my collection. This casserole is hearty and delicious. And you have GOT to try the homemade cream of mushroom soup on the gimmesomeoven blog! I’m sure this Cowboy Casserole is great with the canned stuff, but the homemade is sure to take it to the “awesome” level!

A friend gave me this recipe and I made this today, and since I am allergic to mushrooms, I substituted the cream of mushroom soup with cream of celery soup and used baby butter beans instead of red kidney beans and it came out good.

I think I’d use pinto beans instead of kidney beans. Seems it would be more authentic anyway!

I used Yukon Gold potatoes because I thought the peeling wouldn’t be an issue and everything cooked fine. I tried a bit of cumin in one helping and that worked well too. I might try the suggestions of Rigel tomatoes and/or green chilies next time.

I’m a HUGE fan of canned corned beef, so I added an entire can of it to the ground beef once that was cooked; the casserole was shared with my minister and his family, and got many compliments from all 14 people present :-). Even my minister, a man not given to compliments, said several times that he really liked it, and proclaimed it “very good.” Made my entire day!

Loved this recipe. Only changes I made was using frozen corn, cream of celery soup and Rotel diced tomatoes w/green chiles as I had these on hand. Definitely make again.

I made this for dinner yesterday and it was so delicious! I used taco flavored shredded cheese and it was so good. I normally don’t eat much at once but I had to have a second bowl! I was stuffed. I cannot wait to make this again.

This recipe was EXCELLENT!! My husband is super picky, so I had to tweak it a little bit, but it tastes GREAT!!
I omitted the onions (but used onion pwdr), imo it was just as good w/that substitution. I used ground turkey, and I browned the meat and seasoned it well with petite diced tomatoes, added the mushroom soup, red kidney beans and corn, plus garlic pwd, and some Morton’s seasoned salt to taste.
I peeled and sliced 5 small-ish Red potatoes, and instead of mixing it all together, I stopped at that point, added the mixture to my crockpot, and then added the sliced potatoes STANDING UP, that way half of the potatoes were in the mixture, and half cooked outside of it bc they were sticking up. I didn’t add cheese BUT tomorrow morning, this will be breakfast with a couple of sunny-side up eggs over it, and just before I add the eggs-over-easy, I plan to shred up some cheddar and add it to my serving! This was GREAT! My husband loved it (with just a few adjustments to taste). I can’t tell you how RARE this is for him to LOVE a recipe!! I subbed, plus pinned again so I can make this again, it’s a winner! The leftovers will make a picture-perfect breakfast!! I cooked this in my crockpot for 4hrs on high heat, btw, absolutely PERFECT!! 😋 Thank you for sharing this!!

You can use any all seasoning type of seasoning. I would choose one that have a lower sodium level

I’ve got this in the crockpot and and I can’t wait to try it! I used gold potatoes, grilling beans (I did not have kidney beans), Rotel in place of the diced tomatoes. I added garlic salt, a wood fire garlic seasoning instead of Mrs. Dash’s.

Good recipe. Added beef broth and a can of green beans. Used russet potatoes turned out good . Added cheese when served instead of in crock pot. Used diced tomatoes with green chilies. Rotel.

I made this exactly according to directions the first time. It was good, but we needed more flavor. The second time I adapted it to our tastes. I used spicy Mrs. Dash, more ground pepper, and added leftover Italian green beans. Very easy recipe to adapt.
