Cheesy Crockpot Cowboy Casserole - Family Fresh Meals

Cheesy Crockpot Cowboy Casserole

  • 1/4 cup diced onion
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/2 tsp Mrs. Dash
  • 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
  • 1 can of cream of mushroom soup
  • 1 lb ground beef browned and drained
  • 1 can of diced tomatoes with liquid
  • 1 cup canned corn, drained
  • 1 can dark red kidney beans, drained

  1. Place  all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
  2. Cover and cook on high for 4 hours or on low for 7-8  hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

Cheesy Crockpot Cowboy Casserole

This family favorite is loaded with potatoes, beef, beans and cheese. How can you go wrong with this Crockpot Cheesy Cowboy Casserole recipe?!
Prep Time 10 minutes
Cook Time 4 hours

Ingredients
 

  • 1/4 cup diced onion
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/2 tsp Mrs. Dash
  • 1 lbs small red potatoes sliced thin (about 4-5 small red potatoes),
  • 1 can of cream of mushroom soup
  • 1 lb ground beef browned and drained
  • 1 can of diced tomatoes with liquid
  • 1 cup canned corn drained
  • 1 can dark red kidney beans drained
  • 1 cup of shredded cheddar cheese

Instructions

          I used grillin beans and rinsed juice because i dindnt have kidney beans on hand. Was delicious

    3. Making this now and it looks so good. I messed up though and added a can of corn instead of a cup. Misread the ingredients. Hopefully it turns out ok!!

    4. I’m attempting to make this since the hurricane just came along the coast and do not have cream of mushroom but I do have beef bullion cubes any way of using it?

  1. The directions say to add everything except the cheese but I don’t see cheese listed in the ingredient list. Am I missing something? Also, we don’t have Mrs. Dash. Is there a substitute? Thanks

    1. Sorry Nicole, the 1 cup of cheese got cut off of the recipe card. It is on there now 🙂 Do you have any other sort of an all seasoning?

        Hi Corey, I can’t find Mrs Dash easily out here in Belgium but I am loading up my crock pot now with a smidgen of veg bouillon but not putting in salt. Even DH, my pickiest eater, is interested in this so fingers are crossed!
