I’m thrilled to be  posting over at Betty Crocker again this month with this fun fall treat! What is your favorite season? Fall is BY FAR my favorite.  Crunchy leaves, crispy air and pumpkin flavored EVERYTHING! Droooooool 🙂

There’ s no better way to celebrate this cozy season than to make a big batch of this Slow Cooker Pumpkin Harvest Chex Mix. Our family has been munching on this awesome snack since Halloween. We just can’t get enough!

Slow Cooker Pumpkin Harvest Chex Mix

With just a few simple ingredients you can have this snack in no time! Slow Cooker Pumpkin Harvest Chex Mix is our new favorite fall recipe!
Prep Time 5 minutes
Cook Time 2 hours

Ingredients
 

  • 2 cups Cinnamon Chex™ cereal
  • 2 cups Wheat Chex™ cereal
  • 3 cups Vanilla Chex™ cereal
  • 1 cup pecans
  • 1 cup mini graham crackers
  • 1 cup dried cranberries
  • 1/2 cup pumpkin seeds
  • 1/2 cup butter melted
  • 1/4 cup packed brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 1/2 teaspoons vanilla

Instructions

  • In oval 5- to 6-quart slow cooker, stir together the 3 cereals, pecans, graham crackers, dried cranberries and pumpkin seeds.
  • In small bowl, mix together melted butter, brown sugar, pumpkin pie spice and vanilla. Stir until well combined. Pour over cereal mixture; stir until evenly coated.
  • Cook uncovered on High heat setting 2 hours, stirring every 15 to 20 minutes.
  • Spread cereal mixture on ungreased cookie sheet or waxed paper. Cool 3 to 5 minutes before serving.

Notes

If you can't find mini graham crackers at your local store, simply use broken full-size crackers.
Not a fan of nuts? Leave out the pecans, and substitute with pretzels.

    OMG. Corey, you just made this pregnant woman green with Chex mix craving! Tragically I’ve never seen Chex cereal in Belgium, nor the Netherlands, where we sometimes go. But I am going to beg the local British store to see if they will order some–it’s probably available in the UK… In the meantime–mmm, wow, thank you for the taste memories!

    I’ve been making this for several years and everybody loves it and asks for it every year. We can’t get vanilla chex anymore – I think they stopped making it. This year I found vanilla spice Cheerios and they worked great!
