Always Soft and Chewy Rice Crispy Treats

Have you ever had a crispy treat that was dry and crunchy? It’s the worst, right?!

Growing up, my mom made these treats all they time…and guess what? They were ALWAYS soft and chewy rice cripsy treats. Her secret? BUTTER. The extra butter in these bars will leave you with the always coveted chewy treat. For holidays, have fun cutting these treats into different shapes and or add colorful food sprinkles for the occasion. Because these treats stay soft, it is a cinch to cut them out with cookie cutters.

QUICK TIP: If you don’t have Rice Krispy cereal on hand, any rice cereal works great!

Always Soft and Chewy Rice Crispy Treats

  • 8 tablespoons butter (cut into 1 TBSP tabs)
  • 1 package (10 oz) marshmallows
  • 1/4 tsp vanilla
  • 6 cups rice Krispies cereal
  • Optional: 2-3 Tablespoons colorful sprinkles 
  1. Place marshmallows, butter and vanilla  in a large microwave safe bowl. Microwave on HIGH for 1 minute at a time, stirring in between minutes, until mixture is melted and smooth.marshmallows and tabs of butter in in a mixing bowl

  3. (Note: this is also the time to add in colorful sprinkles if you are doing so.)Colorful sprinkles being mixing into bowl
  4. Prepare a 13 x 9 baking dish with parchment paper, and spread mixture. Because these are uber soft and chewy treats, you need to let them cool for at least 45-60 minutes.Rice krispy treats pushed into a parchment paper lined pan

    1. Use sweetened condensed milk. That will make them chewy and keep them softer longer!

    First I just wanted to say that I made these yesterday and they are so AMAZING! They had great flavor to them, without it being and overpowering taste of sweetness. They are perfect! Also, as the recipe title states, they are and do stay soft and chewy. Second, I have a question to ask. My question is, would it be ok to add more marshmallow to this recipe to increase that flavor? If so, how much would you recommend I add?

  6. This may be a silly question, Can you just melt everything in a sauce pot on the stove instead of in the microwave? I assume it wouldn’t make a difference.

  7. Can’t wait to try! Question, how long do you think these will keep and stay soft and chewy? If I put them in a airtight container can I get away with like 3-4 days? Need them for a party. Thanks!

    1. Yes! In an airtight container, 3-4 days will not be a problem at all. They should still should be nice and soft and chewy for you!
