Friends, let us pause for a minute to consider the humble one-pot hotdish.
A hotdish, for anyone who doesn’t know, is sort of the essence of basic, hearty, Midwestern cooking. It can mean any sort of one-pot meal, but most often it’s a casserole with cream soup, some kind of protein, veggie and a starch. So it’s a whole meal in one dish.
This Creamy Crockpot Chicken Stuffing and Green Beans is the one-pot hotdish at its best. It has everything a good hotdish should have: meat, starch, and veggie all in one pot, with no fancy or complicated ingredients. Just good, plain, solid comfort food.
And because it’s made in the crockpot, it literally takes only a few minutes to put it together. Just toss everything in the crock in the afternoon, and your dish is piping hot by suppertime. It’s all ready to pop in the car and take to the potluck-or to serve up right at your own table. Because that’s the wonderful thing about hotdish: it brings the cozy with it, no matter where it goes.
Creamy Crockpot Chicken Stuffing and Green Beans
Ingredients
- 2 lbs (about 4 chicken breast)
- 1 (6oz) box of stuffing mix
- 1 (10.5 oz) can cream of chicken condensed soup
- 3/4 cup sour cream
- 1/3 cup water
- 10 oz bag frozen green beans
- salt and pepper to taste

- Prepare crockpot with cooking spray. Season chicken with salt/pepper and place in the bottom of a crockpot.
- Next, top chicken with 1 box of stuffing mix.
- In a separate bowl, mix together condensed soup, sour cream and water. Spread mixture over stuffing.
- Place green bean on top. Cover and cook on HIGH for 4 hours. If you need a longer cooking time, you can do LOW for 6 hours, but I recommend the high setting 🙂

You say four hours in crockpot for the crockpot chicken and stuffing. Just before the recipe directions it says five hours cook time. Which is it??

Sorry Kathy, the recipe card thing was taking the average of the LOW and HIGH cooking time. It is 6 hours on LOW or 4 on HIGH. I hope that helps 🙂

Hi! I’m wanting to make this recipe with 2 chicken breasts instead of 4. I’m new to cooking and was hoping you could give me an estimated time that it would take to cook in my crockpot. I know every crock pot is different but I have no idea how long to keep it in there. Any idea how long it would cook on low and on high? I was going to keep everything else about the recipe the same, just less chicken. I would really appreciate it! Can’t wait to try this!

So I have a bit of an obsession with green bean casserole, which is immediately what I thought of when I saw this recipe. So I replaced the Cream of Chicken with Cream of Mushroom, changed the water to veggie stock (mostly because I just had some in the fridge I needed to get rid of), and added French fried onions on top of the soup mix and then a little more on top the green beans, and yum yum. Like thanksgiving in a pot.

I made this yesterday and it was so good! We substituted peas in for the beans though (kiddos preference). It stayed very moist but, by request, I had gravy on the side available and my daughter poured it right over the top. She said it was like a mini thanksgiving. If only Thanksgiving was this easy!!
TIP: Don’t stir the soup/sour cream mixture with the stuffing, just pour it in top. The stuffing ended up too broken down and mushy when it was stirred in.

This is a great tasting recipe. I have been making this recipe since running across it on Pinterest. Both my husband and I love the taste of the dish. It reminds me of Thanksgiving rolled into one dish. I do agree that 4 hours on high is the best cooking method. I cooked it on low for six hours last time but it wasn’t as good as it normally is. I have used chicken breasts and thighs aling with my 2 quart slow cooker and it turns out great. Thank you for sharing this recipe!

I made this several months ago and the stuffing burned a bit (my crockpot cooks really hot), so I’m trying something different this time – I’m making it again tomorrow and am putting raw carrot coins on the bottom of my crockpot under the FROZEN chicken breast (before I add the rest of the stuff on top). I’m sure it will be GREAT! We LOVE LOVE this dish!

This Creamy Crock Pot Chicken Stuffing and Green Beans is one of the best things I have made in a long time. It is absolutely delicious, easy and very economical. I made some sweet potatoes for aside with a bit of brown sugar and bourbon and lots of butter and omg, the aroma in the house. I think the sour cream really adds a lot of zing to everything and all I can say is thanks for posting this. It is going to be my winter favorite I can tell and I will be sure to always keep the ingredients on hand. I used frozen chicken breasts and didn’t even thaw them, just dumped everything in the pot and voila, fabulous. I am so hungry for Thanksgiving goodies that this is the perfect dish to welcome fall. Yesterday was the end of daylight savings and so I feel very “ready” to meet the coming weather with this dish. Thanks again.

I have made this before. It is so yummy. However, this time I winged it. I threw in 4 chicken breasts and topped with cream of mushroom soup and a can of water. Then remembered this recipe and ended up dumping sour cream on top of that, 2 cans of french style green beans, and stuffing on top of that and mixed it together even though that is not what the instructions say. Hopefully it turns out fine . How did yours turn out?

This was very tasty, but I was disappointed with the way the stuffing turned out. It was a mushy mess! Next time I’ll use “Pepperidge Farms” Herb Stuffing mix, b/c it’s cubed, and should hold up better in the crockpot. I added some sliced mushrooms on top of the green beans. The instructions didn’t say if we should mix everything together in the crock pot before we serve it. I had to, b/c there was no way to neatly remove everything layer by layer. Nevertheless, it WAS delicious.

I put defrosted chicken in the crockpot and topped with one can of cream of mushroom soup and a can of water. I was also going to make stuffing on the side. Then I remembered this meal and I have made it before. So I dumped sour cream on top , 2 cans of green beans on top of that and my box of stuffing on top. Mixed it a bit. It should turn out just fine right? Please tell me I do not need to dump it all and start over again. Ugh :(.

I made this 3 weeks ago and I’m making it again today. I’m just one person, so this is a perfect meal for me to make and freeze. First time, I used cream of chicken, today, I’m using cream of bacon. Ok I tried this because all the ingredients sounded good to me. I liked it, but I found it a little dry. Next time I make it I’m going to add more liquid and/or greenbeans. But as quick and easy dinners go. This is a good choice for people on the go!

This is a weekly meal for my family. I add sweet baby fresh carrots as well. I have to add a bit of chicken broth to make sure they cook through. With some cranberry sauce on hand for my husband. I increase the recipe each time to make sure we have leftovers…..no matter what it only lasts one day in my house! I think I need another crockpot!
