Happy National Seafood Month, everybody! OK, I didn’t know there was such a holiday either. But hey, I’m all for it.

I love all kinds of seafood, but if I had to pick a favorite, I’d definitely have to go with shrimp. They’re just as tasty as crabs or lobsters, and a whole heckuva lot easier to work with. (I always feel like crabs should come with a set of instructions explaining how to take them apart.)

But the best thing about shrimp is that they’re just so versatile. Remember that scene in “Forrest Gump” where Bubba is telling Forrest about all the things you can make with shrimp, and it takes him a couple of weeks to get through the list? You can cook shrimp in just about every way it’s possible to cook anything, and you can serve them in just about any dish.

Like, for example, lo mein.

This Honey Garlic Shrimp Lo Mein features SeaPak’s Shrimp Scampi. You can use either the regular or the Light version, depending on how rich you like it. They both come in a nice, garlicky scampi sauce that makes a good base for the lo mein sauce. Then all you have to do is mix in some honey, soy sauce, and sesame oil to give it an Oriental twist.

Throw that all together with some noodles and fresh veggies, and you’ve got yourself a Shrimptacular meal.

Honey Garlic Shrimp Lo Mein

Ingredients: 
8 ounces thin spaghetti noodles or lo mein egg noodles
2 tablespoon olive oil
2 cloves garlic, minced
1 small onion, sliced
1 package of SeaPak Shrimp Scampi
1 cup sugar snap peas
1 cup of carrots, chopped
1 cup baby corn, chopped

Sauce:
3 Tablespoons soy sauce
2 Tablespoons honey
1 teaspoon sesame oil
1/2 teaspoon salt
1/4 teaspoon pepper

Optional topping:
2 scallions, diced

  1. Cook noodles according to package and set aside.
  2. Over a medium/high heat, cook garlic and onions in olive oil for 1-2 minutes.
    Saute onions and garlic in a pan
  3. Stir in SeaPak Shrimp Scampi and continue to cook for 4 minutes, making sure to stir.

  4. Add in snap peas, and carrots. Continue cooking for 3-4 minute until veggies begin to become tender.Chopped carrots, baby corn, sugar peas and shrimp being added to the pan
  5. In a small bowl, mix together soy sauce, honey, sesame oil, salt and pepper. Add in noodles, and sauce. Stir to combine, and continue cooking for 1-2 more minutes.
