Creamy Ranch Crockpot Mashed Potatoes

The holidays are coming, and that means it’s time to start thinking about holiday meals. And one item that seems to find its way onto most holiday tables is mashed potatoes. They’re sort of the ultimate comfort food—soft and creamy and just generally yummy.

Every family has its own version of this holiday treat. Some like it whipped extra smooth, while some prefer a chunkier “smashed” potato. And each family has its own favorite add-ins: sour cream and chives, butter and salt, cheddar cheese and paprika.

My version depends on two things: my crockpot, and Country Crock spread. So you could say it’s a two-crock dish.

I start the potatoes in the Crockpot around mid-afternoon, so they can cook on their own while I go run errands or pick up the kids or whatever. Then, when they’re done, I mash them with milk, sour cream, black pepper, ranch dressing…and of course, the Country Crock, which makes them extra creamy and tasty. I like to leave the potato skins on when I mash them, but the recipe’s just as good with them peeled. Sprinkle on a bit of parsley,  and there you have it: a holiday tradition in a bowl.

So that’s my family’s version of this holiday staple, but I’m sure you probably have your own version that you’re equally loyal to.
