Lately I’ve started to get really into tinkering with sliders. These little, palm-sized sandwiches are useful for all kinds of occasions. They’re the right size for a party appetizer, an after-school snack, or a quick bite when you’re on the road.  And now…sliders are coming to breakfast.

These Breakfast Sliders have all the ingredients of a great breakfast sandwich, in handy slider form. There’s bacon and eggs, green onions and peppers, a touch of fresh spinach for color, and shredded cheddar. You just cook the eggs and veggies together in one big sheet, slide it onto the sliced buns, top them, and pop the whole thing back in the oven to melt the cheese. For a finishing touch, top the buns with some sesame seeds before you dish them out.

This recipe makes a dozen little sliders, or eight slightly larger ones. That’s enough to feed a big, hungry family, with one-slider portions for the little ones and two or three sliders apiece for the grownups. And if there happen to be any left over, you can just wrap them up and stick them in the fridge. Reheated, they make great anytime snacks.

NOTE: If you are not a fan of bell peppers? Prefer mushrooms? Not a bacon fan, but a sausage lover? This recipe can easily be adapted to your liking. Just substitute in your favorites!

 

INGREDIENTS:

1/2 lb Bacon, cooked diced
6 Eggs, whisked
1 Cup baby Spinach, fresh, chopped
1/2 Sweet bell pepper, chopped
1  Cup mozzarella, shredded
1/2 teaspoon salt
1/4 teaspoon Pepper
1.5 Cups Cheddar, shredded
1 12-pack of dinner rolls or Hawaiian sweet rolls
1/4 Cup Butter, melted
2 Tablespoons butter
1 Tablespoon sesame seeds
½ teaspoon garlic powder

 

DIRECTIONS:

1. Preheat oven to 350 degrees F.  In a bowl, combine the bacon, spinach, sweet pepper, salt and pepper. Mix well.  Add the whisked eggs to the bacon mixture and combine thoroughly. Stir in mozzarella cheese.
2. Pour into a 9 x 13 baking dish lined with parchment paper. Pour the mixture into the baking dish.
Bake for approximately 20 – 25 minutes or until the egg is cooked completely. Remove from oven and let cool slightly. Do not turn off oven.

3. Slice the buns horizontally, leaving them all intact. Butter the buns.

4. Place the egg mixture on top of the buns, all in one “sheet”. Sprinkle the shredded cheddar on top of the eggs.

5. Replace the top portion of the buns. In a bowl, mix the melted butter and garlic powder. Brush over the tops of the buns and sprinkle with sesame seeds.

6. Bake for approximately 5-6 minutes or until the cheese melts.

    Made this tonight. Added diced steak and a smathering of country gravy. So many things can be done with the base recipe.

    Using parchment paper to cook the egg mixture allows you to square the corners for a perfect look! To bad I can’t posst the pic…

    I made three with chicken apple sausage. They’re really good. Unfortunately I don’t have a large family and we couldn’t eat them all. One is very filling. I should have cut the recipe in half.
