Well, not to worry. There are lots of great ways to use up leftover ham. Here’s just one of them: a Ham Cheese and Broccoli Quiche.

This starts with a cup of diced ham and turns it into a complete meal – starch, veggies, and all. You mix the diced ham with a bunch of yummy veggies – mostly broccoli, but also some onion, pepper, and celery, to give it a bit of flavor variety. Then you load it into a baked pie shell and top it with a rich, creamy, eggy, cheesy batter. And then just before you bake it, you sprinkle more cheese on top, so it comes out with a lovely, golden top.

This doesn’t taste like “leftovers”; it tastes like a company dinner. In fact, if you still have company in the house, you can proudly serve it to them, and no one will recognize yesterday’s ham. And, since this tastes just as good served at room temperature, it’s also a great meal to take to a holiday potluck.

In fact, this quiche is so good, you might start buying ham even when you don’t have lots of guests, just so you can make it.

Ham Cheese and Broccoli Quiche

DIRECTIONS:

  1. reheat oven to pie shell recommended heat setting (375 degrees F, usually). Bake the pie shell according to the box directions for a pre baked pie shell. After baking is complete remove pie shell from oven and turn heat to 350 degrees F.
  2. Meanwhile, in a bowl, combine the ham, celery, onion, pepper, and broccoli.

  4. Pour the egg mixture into the ham mixture and mix well. Add HALF the cheese and fold it into the mixture as well. Pour into the baked pie shell. Sprinkle the top with the remaining 1 cup of shredded cheese.Ham Cheese And Broccoli Quiche - familyfreshmeals.com

  • 1 cup ham diced

  • 4 eggs whisked
  • ¼ cup heavy whipping cream
  • 1 teaspoon thyme

  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • 2 cups cheddar cheese shredded
  • 1 pie shell

    I made this today and either should have used half as much vegetables or precooked the vegetables to get rid of the excess fluid that cooks out of fresh vegetables. It was so wet I could not tell if the eggs were set. I baked it an extra 10 minutes (40-45 min total) and still was not sure, as the filling never really “set up”. Corey, what did I do wrong here? It tasted ok but the feeling that I might be eating raw egg interfered with my enjoyment.

    1. I had the same problem. There was a lot of liquid coming through the cooked cheese. I am going to cook it 45 total and then let it cool a little to see if it will set.
