Instant Pot Parmesan Garlic Artichokes - Family Fresh Meals Recipe

Did you know the artichoke is actually a flower? The leaves are really petals, and the heart is a bulge at the base of the stem. But unlike some flowers, artichokes taste as good as they look. The tender flesh on the leaves has a unique flavor that’s impossible to describe, but just as impossible to forget.

Starting dinner off with a beautiful, delicious steamed artichoke sets an elegant tone for the whole meal. The problem is, they just take so darned long to prepare. Steaming a whole artichoke can take anywhere from 20 to 40 minutes, and you have to keep an eye on the pot the whole time to make sure the water doesn’t boil away.

If you’re lucky enough to have an Instant Pot, though, the job gets much easier. They cook in half the time, and you don’t have to watch them at all. And if you dress them up with a little garlic and Parmesan before you put them in the pot, they’ll be all ready to eat as soon as the cooking is done. No need to mess with melted butter or anything.

Instant Pot Parmesan Garlic Artichokes

INGREDIENTS:
4 artichokes
2 tsp minced garlic
4 tsp olive oil
1/4 cup grated or shredded parmesan cheese
1/2 chicken or vegetable broth (water also works)

DIRECTIONS:

1. Wash and trim artichokes, removing the top of the artichoke, outer leaves and stem.Instant Pot Parmesan Garlic Artichokes - How to trim artichokes
2. Spread each artichoke open and top each one with 1/2 tsp minced garlic and drizzle 1 tsp of olive oil over top.

3. Sprinkle each artichoke with 1 tbsp grated or shredded parmesan cheese.

4. Using basket insert, place artichokes in the Instant Pot. Pour in 1/2 cup of chicken or vegetable both. You can also use water.

5. Seal Instant Pot, making sure valve is set to seal. Select the steam option and cook for 10 minutes. NOTE: If you have smaller artichokes, you might want to reduce cooking time by a couple minutes.  Once cooking is complete, quick release steam by moving valve to venting. Reminder to use an oven mit to protect hands from steam.

These Instant Pot Parmesan Garlic Artichokes cook in half the time, and you don’t have to watch them at all. They are so yummy you won't even need butter!

    Great recipe! My first time making artichokes. I skipped the cheese and added onion powder and red chili flakes. So good!

        Mine is the 6 Qt. 6 in 1 and it came with a rack that sits on the bottom…not a basket like yours appears to be. I sat my artichoke on that. It worked fine.

  3. We had the same issue. I have a 3qt and could only do one at a time at that size, we’re up to 20 mins and it’s still not pulling off.

      Is your steam button setting it to “high pressure?” These should be cooking on high pressure.

    This was delicious! I only made one (single gal me!) and it was delicious. The 7 minutes was not long ago. 8…maybe 9, would have been better, the leaves were still crisp at the stem. I just threw it back in for a minute!

    The garlic added the best flavor!

    Do I make any adjustments for just 1 or 2 artichokes? I just cooked 3 large ones, that’s all that fit, but want to cook one more huge one. How long please? Thanks!

    Still new using the pot. My mom used to make the best stuffed artichokes… so decided to try this recipe tonight – seemed easy enough!… my IP did not come with a basket, so I put the artichokes in the pot without. I used two really large artichokes- I think I should have gone a minute or two longer, some of the leaves were still a little tough and my fav part.. the heart wasn’t edible? But I love the garlic and cheese and the recipe was so simple!!! I’m going to give it another go!

    Mmmm! I’m excited for this recipe. I grow artichokes so I’m always looking for new recipes to switch up the flavor a bit… thank you so much for sharing. I added garlic scapes to the top as well… sooo good!

    We cooked 2 artichokes and followed instructions and the cooking time was still not enough, would recommend cooking longer these were not tender

  9. I cook artichokes in the IP for about 30 minutes. They come out perfect every time.

  10. I am wondering what size IP you are using? I have an 8 quart and am under the impression that you must use at least 2.5 Cups of liquid for it to be able to reach pressure. Is it different if you are steaming? We are in the process of making these as we speak! Will let you know how it goes, we are new at this!
