Creamy Ravioli Bake Recipe - Family Fresh Meals

Here’s the easiest way to come up with a great recipe: start with something that’s good all by itself. Then, add a bunch of other stuff that makes it even better.

Sounds confusing? Well, here, I’ll show you.

Let’s start with ravioli. That’s a pretty simple, tasty dish that it’s hard to mess up. I mean, all you have to do is heat them up with some tomato sauce, and you’ve got a pretty good meal right there.

But we don’t just want pretty good – we want great. So instead of plain tomato sauce, we’re going to make them with a carbonara sauce. That’s a fancy pasta sauce made with egg, parmesan, and bacon, which turns ordinary spaghetti into art. If you put it together with ravioli instead, you’ve already got yourself a double whammy.

Hey, why stop there? Why not throw in some veggies? Peas are always great in a carbonara sauce, but you can also do spinach or bell pepper or carrot…so why not all four?

Now at this point, what you’ve got in your pot is way beyond plain ravioli. It’s glorified ravioli. And if you stop and serve it right here, I guarantee you no one will turn up their nose at it.

But if you want to make it extra EXTRA special, you can load it all into a casserole dish, top it with bread crumbs, and broil it. Now it’s not just a delicious meal, it’s practically a work of art.

Creamy Ravioli Bake

Ingredients:
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1 egg yolk
1 large handful fresh baby spinach
12 oz frozen cheese ravioli, thawed
2 bacon strips, cooked and chopped
1/2 cup frozen peas
1/2 small red pepper, sliced thin
1 large carrot, sliced thin
1 teaspoon minced garlic
1 teaspoon dried basil or 3 fresh leaves, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup parmesan cheese
1 cup of Bread crumbs

Directions:

1. In a large skillet, melt the butter, stir in the flour until a paste forms.

2. Add the milk and whisk until all the flour mixture is broken down and dissolves.
3. Pour in the beaten egg yolk and whisk fast , don’t stop whisking until the egg is completely incorporated or you will end up with scrambled egg!

4. Once fully combined, bring sauce to a boil, it will begin to thicken. Reduce to simmer. Add the spinach, mix well.

5. Stir in the ravioli, veggies, bacon, garlic, basil, salt and pepper . Mix well. Simmer for about 10-15 minutes. Fold in the parmesan cheese.

6. Transfer to a casserole dish, top with bread crumbs and broil on low until bread crumbs are toasted and golden.

    So yummy! I used a 20 oz. bag of spinach and ricotta ravioli and doubled all the other ingredients for my family of 5. I also used an oven-safe skillet to make it a one pot meal (I cooked the bacon in the oven 🙂). There’s just enough left for my husband’s lunch tomorrow. Definitely a keeper!
