Chocolate Chip Zucchini Bread Recipe - Family Fresh Meals

When the first tender little baby zucchini start showing up in July, it’s great. But as the summer goes on and the zucchini just keep coming, you start to get sick of them. You’re eating them every night, in every conceivable way – grilled, stuffed, sautéed – and you just can’t keep up. There’s even an unofficial holiday on August 8 called “National Sneak Some Zucchini Into Your Neighbor’s Porch Day” for people who can’t cope with the flood of squash.

Fortunately, there’s also a much tastier solution: zucchini bread.

Grating up zucchini and baking it into a moist, sweet bread is an easy way to make it disappear like magic. Suddenly, it’s not a burdensome vegetable – it’s a delicious treat that family and friends will gobble right up and ask for more. And if you throw some chocolate chips in there, you just might see it vanish the minute you get it out of the oven.

In fact, here’s a fun trick: try leaving your windows open while you bake this Chocolate Chip Zucchini Bread. Instead of having to sneak zucchini onto your neighbor’s porch, you’ll have them sneaking over to your place to beg for a slice.

Chocolate Chip Zucchini Bread

Ingredients:

2 eggs
¼ cup of brown sugar
1 cup of white sugar
2 teaspoons of vanilla extract
½ cup of vegetable oil
1 cup of shredded zucchini
1 ½ cups of flour
½ teaspoon of salt
½ teaspoon of baking powder
1 teaspoon of baking soda
¼ teaspoon of nutmeg
1 ½ teaspoons of cinnamon
½ cup of chopped walnuts
½ cup of semi-sweet chocolate chips

Directions:
1. Preheat oven to 350 degrees F. In a large bowl, whisk together eggs and sugars, until smooth.

2. Add in zucchini, vanilla, and oil. Whisk gently until combined.

3. In a smaller bowl, add in flour, salt, baking powder, baking soda, nutmeg, and cinnamon.  Gently mix together, and set aside two tablespoons of flour mixture.

4. In a small bowl, add in walnuts and chocolate chips, coat with the two tablespoons of flour mixture.

5. Add flour mixture to the zucchini mixture, and whisk together gently (do not overmix it).

6. Fold in walnuts and chocolate chips.

7. Pour mixture into a parchment lined and greased bread pan. Bake for 55-60 minutes, or until a toothpick inserted comes out clean.
8. Allow to cool 10 minutes before serving.

    As an experienced cook, I was able to figure it out, but a novice might be confused by the omission of flour as one of the dry ingredients to be mixed together in step #3. Otherwise, it sounds like a really yummy recipe and I plan on giving it a try.
