Peanut Butter Cup Smore Bites Recipe - Family Fresh Meals

If I had to name a dessert that’s perfect for summertime, I’d definitely have to say s’mores.

For anyone who never went to summer camp as a kid, these are a classic campfire treat made by toasting marshmallows and squishing them between two graham crackers, along with a square of chocolate. The molten marshmallow melts the chocolate and it all oozes out in a sweet, sticky elixir that tastes like…summer.

There’s only one catch: to make s’mores, you have to have a fire to toast the marshmallows. So if you don’t have a fire pit handy, or if it’s been raining all day, are you just out of luck?

Well, not exactly. You can’t have the fun of toasting the marshmallows, but you can still enjoy that chocolate-graham-marshmallow flavor by making them in the oven. And as long as you’re doing that, you might as well take the chance to tinker with the recipe a little.

My Mini Peanut Butter Cup Smore Bites put a new twist on basic s’more recipe by substituting mini peanut butter cups for the plain chocolate. These would be hard to squish between two flat graham crackers, but they fit perfectly in mini muffin cups with a graham cracker crust on the bottom and a hot, melted marshmallow on top.

In just a few minutes, these bake up into warm, bite-sized gems that ooze their sticky sweetness in your mouth – just like the real thing.

Peanut Butter Cup Smore Bites

Ingredients:

7 graham cracker sheets
1/4 cup powdered sugar
5 tablespoons butter, melted
24 miniature peanut butter cups
12 large marshmallows

Directions:

1. Preheat the oven to 350°F. Grease a 24 cup mini muffin pan, making sure it is well coated. Throw the graham cracker sheets into a food processor until finely grounded, leave no chunks behind.

2. In a medium sized bowl, combine the graham cracker crumbs, sugar and melted butter, mixing until well combined.

3. Divide the mixture into a 24-cup miniature muffin pan, about a tablespoon in each well. Using your thumb, press the graham cracker mixture into the pan, creating a well. You could also use a second mini muffin pan, press it onto your smores pan and make instant wells. Bake for 5 minutes. Set aside.

4. Unwrapping the mini peanut butter cups and cutting your 12 marshmallows in half, creating 24 marshmallows for your bites. Place a mini peanut butter cup into each crust, pressing down slightly. Then, take a marshmallow and place it on top of each piece of candy, sticky side down.

8. If you want a broiled top: Place into the oven, using the broiler for 1-3 minutes. Watch closely!  If you want a regular smores without the browning, place back into the oven at 350 degrees for just a few minutes. Once removed from the oven, place onto a cooling rack to completely cool.
