Mac and Cheese Stuffed Meatloaf

Mac and Cheese Stuffed Meatloaf Recipe - Family Fresh Meals --

Pro tip: if you ever want to see your family look bored, answer the question “What’s for dinner?” with the single word “Meatloaf.”

It’s not that there’s anything wrong with meatloaf. In fact, there’s a lot that’s right with it. It stretches your budget by combining cheap ground beef with onion and bread crumbs, and it’s a satisfying meal that the whole family will eat. But it’s just kind of – plain. No one minds it, but no one gets excited over it.

But what if you want to get all these perks, and you don’t want your family to look bored? Why, you dress the meatloaf up, of course. You glaze it, or make it into cupcakes – or hide a surprise in the middle.

The surprise in this meatloaf is a simple stuffing made from boxed macaroni and cheese. You fix it according to the directions on the package, then spoon it into a hollow in the ground beef mixture and top it with a little extra cheddar and mozzarella. Then mold the rest of the beef mixture over top before baking it.

When this comes out of the oven, it looks just like any other meatloaf. But when you slice into it and all that golden, creamy mac and cheese spills out, I promise you, no one will look bored.

This has to be the worse Meatloaf recipe EVER! Not only is it unhealthy, but it’s also very ‘fattening’, (yeah, I SAID IT!) Also, why would you post this recipe right after the holidays, when most folks are trying to take off the excess lbs. which they gained throughout the holidays? Bad choice.

I am so sorry you are not excited about this recipe Angelina. If you were prefer to leave the cheesy stuffing out, that might be a better choice for you. I believe delicious recipes in moderation are ok. This recipe has become a football season favorite for us 🙂

Not every one is dieting. Not everyone eats more than their fair share. Everything in moderation…. then when you see a recipe that scares you, you will be able to understand why it may not be for you, but for someone else.
Now, I must go….. I’m going to make this recipe tonight.

Seriously Angelina you are very rude.

wow, is this chic serious…. then go to a freaking diet recipe! THIS IS AMAZING RECIPE!

    5. Nobody is forcing you to eat it. Also how the heck do you get off reviewing a recipe based on some whiny trigger you have because you are uncomfortable with your own body? Get over yourself.

I made this for dinner tonight. The worst thing about it was my husband’s constant trolling through the kitchen repeatedly asking when it would be done. ? It did not disappoint! Dibs have already been called on the leftovers tomorrow, which is a rarity in this house. No doubt this one is going to be requested often. It is fairly decadent, but it only made it that much more satisfying with a reasonable portion. We balanced it out with fresh green beans and a salad. Yum!

    1. Haha! OMG. The trolling husband just killed me. I am so happy you all loved it. Great idea balancing out with green beans and a salad. It sounds like a perfect meal!

  3. Do you think this can be made in a bread pan?

    1. I think that should work ok Adriane!

  4. I am speechless at how delicious this is. It’s the epitome of the 2 best comfort foods all in one!!!

  5. Ludos mom says:

This was amazing!! It was the perfect combo of our 2 favorite items. Angela, if you can’t say anything nice, why say anything. Your rude. Don’t project your issues on someone else. I’m not on a diet and neither is my family. What we are is able to control our overeating and our meanness

  6. This is just fat man loving right here. Added bacon to the mix of mac before loading the loaf, whew whole new level. P.S. use good bacon.

  7. It ended up great except the Mac n cheese was a little over cooked. Should I have undercooked it in the initial cooking?

  8. I haven’t made this yet but will give it a try. Am a lifelong hater of meatloaf but this variation is enough to pique my interest!
