Easy Strawberry Crepes Recipe from Family Fresh Meals

In our house, pancakes are a breakfast staple. Maybe not so much on weekdays, unless I’ve been on top of my game enough to make a bunch ahead of time and freeze them. But on Saturday and Sunday mornings, I serve them regularly.

But crepes – now those are something else entirely. Those thin, delicate, buttery little pancakes are definitely a special-occasion treat. Made with an eggy batter and topped with fruit, they have a light, melt-in-your-mouth texture that definitely says this is not just an everyday breakfast.

The thing is, though, they’re really not that hard to make. Sure, they take a little longer than regular ol’ pancakes, because you have to cook them gently over low heat. But as long as you’ve got a good recipe and plenty of time, you can cook them up perfectly light and golden without fail.

And as for topping them, that’s even easier. All you have to do is cook some strawberries – fresh or frozen – in a pot with water and sugar until they’re soft.

So maybe there’s really no need to save these Strawberry Crepes for a special occasion. You can just whip up a batch on any lazy weekend morning, and let them create the occasion for you.

Easy Strawberry Crepes

INGREDINETS:
3 eggs
1 1/2 cups flour
1 cup water
2 teaspoons sugar
1/2 teaspoon salt
4 tablespoons melted butter

Strawberry sauce:
16 ounces strawberries (fresh or frozen)
1/4 cup sugar
1/4 cup water

DIRECTIONS:

2. Slowly add in water so mixture is smooth. Next add in sugar and salt and melted butter. Mix well, to make sure batter is as smooth as possible.Easy Strawberry Crepes - Add in sugar to mixing bowl
3. Heat skillet over medium low heat and spray lightly with cooking spray. Pour out a small amount of batter and spread it around pan by lift the pan and gently tilt it to spread the batter around the bottom of the pan. You want the crepes to be thin.
4. Lightly cook on each side. The crepe is ready to flip when the top starts to cook (similar to a pancake), and a spatula can slide under the crepe easily.Easy Strawberry Crepes - Crepe cooked in a pain

5. To make the strawberry sauce: Combine all ingredients in a saucepan and cook over medium until strawberries have softened. Cooking time will vary depending on type of strawberries used (fresh or frozen).Easy Strawberry Crepes - Strawberries cooking with sugar
