Leftover Thanksgiving Food Lunchbox Ideas

For a lot of us, Thanksgiving was a lot smaller than usual this year. To stay safe, we had no one but the immediate family around the table. The result: a whole ton of leftover turkey (and a few other Thanksgiving leftovers) in the fridge.top down image of 4 lunchboxes packed with Thanksgiving leftovers

Leftover Thanksgiving Food Lunchbox Ideas

The best way to use up all that turkey is to eat it for lunch. Rather than just serve up a rerun of Thanksgiving dinner, I like to turn it into new and interesting lunch box meals. For example (see individual recipes below):

  1. Chop it up and mix it with some scrambled eggs, cheese, and veggies, and bake it in a muffin tin to make little mini frittatas.
  2. Chop it up with celery, cranberries, and a creamy dressing to make a turkey salad that’s great in a cup of butter lettuce.
  3. Slice it and serve it on rolls with provolone and some leftover cranberry sauce.
  4. Slice it and layer it on crusty bread with some sliced cheddar and leftover green bean casserole, then fry it to make an original and tasty grilled cheese sandwich.

And if you’ve got any other leftover odds and ends, like sweet potatoes or cranberry sauce, you can just serve them on the side.
