Sicilian Chicken Noodle Soup

Chicken noodle soup is kind of the most basic soup there is, am I right? A nice, soothing soup that Mom makes for you when you’re sick or when it’s cold out.

Simple, nourishing comfort food with nothing fancy or exotic about it. Well, this is not your mother’s chicken soup. Unless, of course, your mother is a Sicilian mama.

This soup starts with all the basic ingredients of an old-fashioned chicken noodle soup — chicken, pasta, onion carrots, celery. Pretty standard fare…but that’s just the beginning. On top of that base, it piles on layer after layer of Mediterranean flavor. Tangy tomatoes. Green and red bell peppers. Diced potatoes and bay leaf.

Why use bone-in chicken thighs? Wouldn’t it be easier to start with skinless, boneless thighs or breasts?

  • Look, I’m all about saving you time, but flavor matters too. Cooking the entire chicken thigh, with skin and bones, will add a richness to the broth that you just can’t get from the easy-to-use boneless breasts. It’s only a tiny bit of extra work, and your taste buds will thank you.

If I don’t have ditalini, can I substitute another kind of pasta?

  •  Any small pasta, like orzo or tubettini, should work in this recipe. Just check the cooking time on the package and adjust the time it spends in the broth to match.

Can I make this soup in my Crockpot?

  • Yes! After washing and prepping the veggies, put all the ingredients except the pasta and parsley in the crock and cook for four to six hours on low. Then continue with the recipe from Step 4.

Can I freeze the leftovers?

  • Yes, you can freeze it in an airtight container for up to two months. Great make-ahead meal!

Sicilian Chicken Noodle Soup

  1. Wash and prep your vegetables. Combine all ingredients except the pasta and parsley to a large pot. If you are using salted stock or if you have salt in your canned tomatoes, start by using 2 tsp of salt for seasoning.   2. Cover and bring your pot to a boil. Once it has reached a rapid boil, reduce the heat and simmer partially covered for 30 minutes, till your chicken is cooked.
  3. Once your chicken is cooked, remove the chicken and set it to the side for a moment.removing chicken with tongs from soup pot

Sicilian Chicken Noodle Soup

This Sicilian Chicken Noodle Soup combines the comfort of plain old chicken noodle soup with the zest and fun of Italian cooking.

Cook Time 45 minutes

Ingredients
 

  • 1.5 pounds of bone in and skin on chicken thighs
  • 1 medium yellow onion diced
  • 4 celery stalks diced
  • 3 medium carrots peeled and diced
  • 1 red bell pepper cored, and diced
  • 1 green bell pepper cored and diced
  • 2 russet potatoes peeled and diced
  • 1/2 TBSP of minced garlic
  • 1 14.5 oz canned diced tomatoes
  • 2 dry bay leaves
  • 2 tsp of salt
  • 1 32 oz chicken stock
  • 4 cups of water
  • 3/4 dry cup ditalini pasta
  • 1/2 cup fresh Italian parsley
  • salt and pepper to taste half way through

    I made this tonight using leftover turkey legs and wings. I just put it all in the crockpot with extra potatoes and left out the pasta all together. I let it cook all day while I was at work. When I got home I deboned the turkey. It turned out fabulous!
