Creamy Ravioli Bake

  • Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1½ cups milk
  • 1 egg yolk
  • 1 large handful fresh baby spinach
  • 12 oz frozen cheese ravioli, thawed
  • 2 bacon strips, cooked and chopped
  • ½ cup frozen peas
  • ½ small red pepper, sliced thin
  • 1 large carrot, sliced thin
  • 1 teaspoon minced garlic
  • 1 teaspoon dried basil or 3 fresh leaves, chopped
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup parmesan cheese
  • 1 cup of Bread crumbs
  1. Directions:
  2. In a large skillet, melt the butter, stir in the flour until a paste forms.
  3. Add the milk and whisk until all the flour mixture is broken down and dissolves.
  4. Pour in the beaten egg yolk and whisk fast , don't stop whisking until the egg is completely incorporated or you will end up with scrambled egg!
  5. Once fully combined, bring sauce to a boil, it will begin to thicken. Reduce to simmer. Add the spinach, mix well.
  6. Add the ravioli, veggies, bacon, garlic, basil, salt and pepper . Mix well. Simmer for about 10-15 minutes. Fold in the parmesan cheese.
  7. Transfer to a casserole dish, top with bread crumbs and broil on low until bread crumbs are toasted and golden.
