Happy 4th Birthday! Princess Cake
Serves: 24
  • 16 0z miniature marshmallows ( about 1.5 bags)
  • 2-4 Tbsp water
  • 1.5 tsp vanilla extract
  • 2 lbs confectioners sugar, divided
  • Crisco
  • cake mix
  • 1 large tub of frosting (to hold fondant on cake)
  1. Place marshmallows in a large microwave safe bowl, and microwave on high for about 1 min, to start melting the marshmallows.
  2. Transfer marshmallows to mixer bowl and add 1.5 tsp of vanilla extract.
  3. Lube up your dough hook with Crisco. (basically anything that is going to touch the fondant should be lubed up with Crisco... your hands, the rolling mat. The fondant starts off EXTREMELY sticky, so this helps make it not stick to you or the ,mat)
  4. Slowly beat in confectioners' sugar 1 cup at a time. reserving 1 cup for kneading.
  5. Lube up your rolling mat and hands with Crisco.
  6. Remove fondant from mixer and place on mat for kneading
  7. When you begin, the dough will be very sticky. As you knead, the dough will become more pliable. Turn dough out, working in the last cup of sugar until fondant is smooth and no longer sticky to the touch.
  8. Form the fondant into balls, and warp tightly in plastic wrap and refrigerate overnight. To use, you can leave fondant at room temp, or pop in the microwave for a few seconds to soften the texture for molding.
  9. Prepare your cake mix of choice. They do make dress cake molds, if you plan on making this kind of cake again. Since I didn't know about the cake mold until after I made the cake ( hehe) I used a glass Pyrex bowl and a small square cake pan to make the dress cake. To add a little height, I also added a cupcake to her waist. Stack the two cakes. Wrap your doll of choice in plastic wrap, make a small hole in the top of the cake, then insert doll into cake.
  10. Next you must apply a crumb coat so the fondant with stick. Basically all this is, is a layer of yummy frosting :) Once this is done, it's time to have fun with fondant. Coloring it whatever color you would like, mold it, rolling in out, just have fun!
