- 2 lb pork roast
- 3 Tablespoons vegetable oil
- Salt and pepper
- 1 cup orange juice
- 1/3 cup fresh lime juice, about 2-3 limes
- 4 gloves of garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 teaspoon oregano
- 1 Tablespoon salt
- 2 bay leaf
- small tortillas
Toppings
- Shredded lettuce
- pico de gallo
- feta cheese crumbles
In a large skillet, heat vegetable oil over a high heat. Season pork well with salt and pepper. Brown all sides of pork. Prepare a crockpot with nonstick cooking spray and place browned roast in crockpot.
In a small bowl, mix together orange juice, lime juice, garlic, cumin, chili powder, oregano, and salt.
Pour sauce over pork. Flip pork around so it is all coated in sauce. Add in 2 bay leaves.
Cook on high for 6 hours or low for 8-10 hours, until pork is cooked all the way through.
Remove pork from crockpot and shred. Place shredded pork on a large baking sheet. Spoon some of the sauce over the pork, and broil for 4-5 minutes.
Build your street tacos with your favorite toppings. I used shredded lettuce, pico de gallo (check out my recipe here) and feta cheese.
