Ingredients

  • 2 lb pork roast
  • 3 Tablespoons vegetable oil
  • Salt and pepper
  • 1 cup orange juice
  • 1/3 cup fresh lime juice, about 2-3 limes
  • 4 gloves of garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon oregano
  • 1 Tablespoon salt
  • 2 bay leaf
  • small tortillas

Toppings

  • Shredded lettuce
  • pico de gallo
  • feta cheese crumbles

Instructions

  • In a large skillet, heat vegetable oil over a high heat. Season pork well with salt and pepper. Brown all sides of pork. Prepare a crockpot with nonstick cooking spray and place browned roast in crockpot.
  • In a small bowl, mix together orange juice, lime juice, garlic, cumin, chili powder, oregano, and salt.
  • Pour sauce over pork. Flip pork around so it is all coated in sauce. Add in 2 bay leaves.
  • Cook on high for 6 hours or low for 8-10 hours, until pork is cooked all the way through.
  • Remove pork from crockpot and shred. Place shredded pork on a large baking sheet. Spoon some of the sauce over the pork, and broil for 4-5 minutes.
  • Build your street tacos with your favorite toppings. I used shredded lettuce, pico de gallo (check out my recipe here) and feta cheese.
