Crockpot Detox Soup

- 1 medium onion diced
- 3 large carrots peeled and sliced into rounds
- 3 cups frozen green beans
- 4 cups of chopped cabbage about 1/2 a large head head of cabbage cored and chopped
- 1 cup diced celery
- 16 ounce can red kidney beans drained
- 1 lb boneless skinless chicken breasts
- 1.5 teaspoon salt
- 1/2 teaspoon pepper
- 2-3 teaspoons minced garlic
- 1 TB dried parsley
- 2 bay leaves
- 1 28oz can crushed tomatoes
- 4 cups beef broth
- 2 cups water
- 2 cups loosely packed fresh baby spinach.
Directions:
Place onions, carrots, green beans, cabbage, celery, and beans at the bottom of your crockpot.
Top with chicken breasts. Add salt, pepper, garlic, bay leaf, and parsley. Pour in crushed tomatoes, beef broth, and water into the pot.
Cover and cook on LOW for 6-8 hours or on HIGH for 4 hours, or until vegetables are tender, and chicken is throughly cooked. Remove bay leaves.
Remove chicken breasts from crockpot and shred with 2 forks. Place shredded meat back into the crockpot. Stir in baby spinach and cover. Continue cooking for 5 more mins, until spinach is cooked down.
