- 8 ounces thin spaghetti noodles or lo mein egg noodles
- 2 tablespoon olive oil
- 2 cloves garlic minced
- 1 small onion sliced
- 1 package of SeaPak Shrimp Scampi
- 1 cup sugar snap peas
- 1 cup of carrots chopped
- 1 cup baby corn chopped
- Sauce:
- 3 Tablespoons soy sauce
- 2 Tablespoons honey
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Optional topping:
- 2 scallions diced
Cook noodles according to package and set aside.
Over a medium/high heat, cook garlic and onions in olive oil for 1-2 minutes.
Stir in Seapak Shrimp Scampi and continue to cook for 4 minutes, making sure to stir.
Add in snap peas, and carrots. Continue cooking for 3-4 minute until veggies begin to become tender.
In a small bowl, mix together soy sauce, honey, sesame oil, salt and pepper, set aside.
Add in noodles, and sauce. Stir to combine, and continue cooking for 1-2 more minutes. Serve immediately, and top with optional scallions
