Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 3-4 garlic cloves minced
  • 28 oz diced tomatoes
  • 6 oz tomato paste
  • 1/2 red bell pepper thinly sliced
  • 1/2 green bell pepper  thinly sliced
  • 1 small onion diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 1/4 cup water
  • 1 package of your favorite pasta prepared as directed on box

Instructions

  • Start by seasoning chicken well with salt and pepper. Add the rest of ingredients EXCEPT for the pasta. Stir well to combine.
  • Cover and set crockpot on LOW for 6-7 hours or on HIGH for 3-4 hours.
