Air Fryer Zucchini Fries

Ingredients

  • 2 large zucchini- cut in half and sliced
  • 2 egg
  • 2 cup Panko Breadcrumbs
  • 2 teaspoon Lawry’s garlic salt or any brand of garlic salt
  • 1/3 cup grated parmesan cheese

Instructions

  • Wash and prepare your zucchini by cutting in half horizontally and slice.
  • In a medium bowl add the eggs and whisk.
  • In another medium bowl add the breadcrumbs, garlic salt, and parmesan cheese and whisk until combined.
  • Dip the zucchini slices into the egg and immediately into the breadcrumb mixture. Toss the slices to cover evenly.
  • Continue with all slices and place in a single layer in the air fryer (you may have to do two batches).
  • Bake at 400 degrees for 7-8 minutes until golden brown.
