Sheet Pan Sausage And Potatoes

Ingredients

  • 1 pound gemstone baby potatoes, halved
  • 12 oz beef smoked sausage, thickly sliced
  • 1 cup baby carrots halved
  • 1 large green bell pepper seeded and diced
  • 3 small shallots quartered
  • 3 Tablespoons avocado oil
  • 1 oz packet of garlic parmesan wing seasoning mix

Instructions

  • Preheat the oven to 425 degrees Fahrenheit and cover a large sheet pan with aluminum foil.
  • Use a cutting board and sharp knife to cut the potatoes in half, thickly slice the sausage at an angle, cut the carrots in half, seed and dice the green bell pepper and quarter the shallots.
  • In a large sized mixing bowl, toss together the prepared potatoes, sausage, carrots, bell pepper and shallots.
  • Drizzle the avocado oil over the mixture and toss to coat everything well. Sprinkle the garlic parmesan seasoning all over the ingredients and toss until everything is coated and well mixed.
  • Pour the mixture out onto the prepared sheet pan and spread into an even layer.
  • Bake for 30-35 minutes or until a fork goes easily into the potatoes and carrots and the rest of the ingredients are roasted to your preference. Remove from the oven and serve hot.
