- 1 pound lean ground beef
- 1 oz taco seasoning
- 1 cup of taco/Mexican blended cheese
- ½ cup of corn drained
- ½ cup of black beans drained and rinsed
- 1 egg
- 2 pack refrigerated pie crust
Preheat your oven to 400 degrees F. Brown your beef and add taco seasoning and ⅔ cup of water (per the package directions) and bring to a simmer.
Add your cheese and stir well.
Incorporate your corn and black beans.
Using a 4 inch diameter biscuit cutter, cut circles into the pie dough and place a heaping TBSP of meat in the center of ½ of the circle pieces.
Beat your egg and then brush egg wash around the edges of the circles with meat in them. Then top with the remaining pie crust circles. Then using a fork or an uncrustable sandwich maker, make indentions around the edges so the filling does not leak out.
Then brush an egg wash over the top of the taco hand pie. Place them on a lined baking sheet and bake for 15 minutes.
