Ingredients

  • 1 pound lean ground beef
  • 1 oz taco seasoning
  • 1 cup of taco/Mexican blended cheese
  • ½ cup of corn drained
  • ½ cup of black beans drained and rinsed
  • 1 egg
  • 2 pack refrigerated pie crust

Instructions

  • Preheat your oven to 400 degrees F. Brown your beef and add taco seasoning and ⅔ cup of water (per the package directions) and bring to a simmer.
  • Add your cheese and stir well.
  • Incorporate your corn and black beans.
  • Using a 4 inch diameter biscuit cutter, cut circles into the pie dough and place a heaping TBSP of meat in the center of ½ of the circle pieces.
  • Beat your egg and then brush egg wash around the edges of the circles with meat in them. Then top with the remaining pie crust circles. Then using a fork or an uncrustable sandwich maker, make indentions around the edges so the filling does not leak out.
  • Then brush an egg wash over the top of the taco hand pie. Place them on a lined baking sheet and bake for 15 minutes.
