Ingredients

  • 3 pounds carrots cut in ½” pieces (about 6 cups)
  • cup butter
  • 2 cloves garlic minced
  • ¼ cup brown sugar packed
  • 2 tablespoons honey
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper
  • ¼ teaspoon cinnamon
  • dash of nutmeg
  • chopped parsley for garnish

Instructions

  • Melt butter in a large skillet over medium high heat. Add carrots and garlic and cook for 7 minutes, stirring frequently.
  • While carrots are cooking, in a medium bowl, combine brown sugar, honey, salt, pepper, cinnamon, and nutmeg. Mixture will be sticky.
  • Add mixture to carrots in skillet and stir to coat. Continue cooking for 10 more minutes or until carrots are tender crisp.
  • Garnish with chopped parsley and serve immediately.
