- 3 pounds carrots cut in ½” pieces (about 6 cups)
- ⅓ cup butter
- 2 cloves garlic minced
- ¼ cup brown sugar packed
- 2 tablespoons honey
- ½ teaspoon salt
- ¼ teaspoon fresh ground pepper
- ¼ teaspoon cinnamon
- dash of nutmeg
- chopped parsley for garnish
Melt butter in a large skillet over medium high heat. Add carrots and garlic and cook for 7 minutes, stirring frequently.
While carrots are cooking, in a medium bowl, combine brown sugar, honey, salt, pepper, cinnamon, and nutmeg. Mixture will be sticky.
Add mixture to carrots in skillet and stir to coat. Continue cooking for 10 more minutes or until carrots are tender crisp.
Garnish with chopped parsley and serve immediately.
