Tzatziki Sauce

Ingredients

  • 1 medium English cucumber grated
  • 2 cups Greek Yogurt
  • 2 large garlic cloves minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • ½ teaspoon salt
  • teaspoon pepper
  • Pita and veggies for serving

Instructions

  • Place a cutting board on the table. Using the largest holes on your grater, grate the cucumber.
  • Place the cucumber into a mesh cloth or cheesecloth and squeeze the excess water out over a sink. You can also work in batches, squeezing water out from a handful of grated cucumber at a time.
  • Set the cucumber into a large bowl.
  • Add the Greek yogurt, minced garlic, lemon juice, olive oil, dill, mint, salt, and pepper to the bowl. Gently mix the ingredients together with a rubber spatula.
  • Taste a small amount of the dip and adjust any flavors if needed.
  • Transfer the dip to a serving bowl and serve chilled with fresh pita and veggies.
