- 1 medium English cucumber grated
- 2 cups Greek Yogurt
- 2 large garlic cloves minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh mint
- ½ teaspoon salt
- ⅛ teaspoon pepper
- Pita and veggies for serving
Place a cutting board on the table. Using the largest holes on your grater, grate the cucumber.
Place the cucumber into a mesh cloth or cheesecloth and squeeze the excess water out over a sink. You can also work in batches, squeezing water out from a handful of grated cucumber at a time.
Set the cucumber into a large bowl.
Add the Greek yogurt, minced garlic, lemon juice, olive oil, dill, mint, salt, and pepper to the bowl. Gently mix the ingredients together with a rubber spatula.
Taste a small amount of the dip and adjust any flavors if needed.
Transfer the dip to a serving bowl and serve chilled with fresh pita and veggies.
