- 14 medium sized pancakes
- 8 eggs scrambled and seasoned with salt and pepper
- 2 cups shredded cheddar cheese
- 12 sausage links fully cooked and chopped, about 2 cups (substitute in vegetarian sausage links for vegetarian friendly option)
Preheat oven to 350 degrees. Prepare an 8 X 8 baking dish with cooking spray. Place 4 pancakes on the bottom of the dish.
NOTE: Depending on the size of your pancakes, you may need to use more or less than 4. Just make sure each layer of pancakes are touching or overlapping some.
Next place 1/2 of your scrambled eggs, and 1/2 cup of cheese on top of pancakes.
Place another layer of 4 pancakes and top with chopped sausage and 1/2 cup of cheese.
Finally layer the last 4 pancakes and top with remaining eggs and 1 cup of cheese. Bake at 350 degrees for 10-15 minutes, until cheese is melted.
