Breakfast Lasagna Casserole

Ingredients

  • 14 medium sized pancakes
  • 8 eggs scrambled and seasoned with salt and pepper
  • 2 cups shredded cheddar cheese
  • 12 sausage links fully cooked and chopped, about 2 cups (substitute in vegetarian sausage links for vegetarian friendly option)

Instructions

  • Preheat oven to 350 degrees. Prepare an 8 X 8 baking dish with cooking spray. Place 4 pancakes on the bottom of the dish.
  • NOTE: Depending on the size of your pancakes, you may need to use more or less than 4. Just make sure each layer of pancakes are touching or overlapping some.
  • Next place 1/2 of your scrambled eggs, and 1/2 cup of cheese on top of pancakes.
  • Place another layer of 4 pancakes and top with chopped sausage and 1/2 cup of cheese.
  • Finally layer the last 4 pancakes and top with remaining eggs and 1 cup of cheese. Bake at 350 degrees for 10-15 minutes, until cheese is melted.
