Crockpot Detox Soup

Ingredients

  • 1 medium onion diced
  • 3 large carrots peeled and sliced into rounds
  • 3 cups frozen green beans
  • 4 cups of chopped cabbage about 1/2 a large head head of cabbage cored and chopped
  • 1 cup diced celery
  • 16 ounce can red kidney beans drained
  • 1 lb boneless skinless chicken breasts
  • 1.5 teaspoon salt
  • 1/2 teaspoon pepper
  • 2-3 teaspoons minced garlic
  • 1 TB dried parsley
  • 2 bay leaves
  • 1 28oz can crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 2 cups loosely packed fresh baby spinach.

Instructions

  • Directions:
  • Place onions, carrots, green beans, cabbage, celery, and beans at the bottom of your crockpot.
  • Top with chicken breasts. Add salt, pepper, garlic, bay leaf, and parsley. Pour in crushed tomatoes, beef broth, and water into the pot.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 4 hours, or until vegetables are tender, and chicken is throughly cooked. Remove bay leaves.
  •  Remove chicken breasts from crockpot and shred with 2 forks. Place shredded meat back into the crockpot. Stir in baby spinach and cover. Continue cooking for 5 more mins, until spinach is cooked down.
