- 32 oz vegetable or chicken broth
- 1 cup of chopped carrots
- 1 onion diced
- 1 large potato cubed
- 3 cloves of garlic minced
- 2 cups of frozen broccoli
- 2 cups of frozen green beans
- 1 can of garbanzo beans
- 1 can of diced tomatoes
- 3 cups of V8
- 2 or 3 bay leaves
- 1 tbsp Italian seasoning
- 2 tbsp olive oil.
In a large pot, cook carrots, onion, and garlic in oil for 5 minutes or until onion is tender.
Add the potatoes and cook for and addition 3-5 minutes.
Add broth, V8 juice, garbanzo beans, tomatoes, green beans, broccoli, Italian seasoning, and bay leaves. Bring to a boil.
Reduce heat; simmer, uncovered, for 15-20 minutes.
