Ingredients

  • 6 large Roma tomatoes
  • ¼ cup olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1/3 cup crumbled blue cheese or feta cheese
  • ¼ cup Balsamic reduction or store bought balsamic glaze
  • 2 tablespoons chopped basil

Instructions

  • Chop tomatoes and add to mixing bowl.
  • Add the rest of the ingredients and toss to coat.
  • Refrigerate for at an hour before serving. Serve and enjoy.
