- 6 large Roma tomatoes
- ¼ cup olive oil
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1/3 cup crumbled blue cheese or feta cheese
- ¼ cup Balsamic reduction or store bought balsamic glaze
- 2 tablespoons chopped basil
- Chop tomatoes and add to mixing bowl.
- Add the rest of the ingredients and toss to coat.
- Refrigerate for at an hour before serving. Serve and enjoy.
