Candied Sugar Peanuts

Ingredients

  • 2 cups unsalted roasted peanuts
  • 1 cup granulated sugar
  • 1/3 cup water
  • 1/2 tsp vanilla extract

Instructions

  • Line a baking sheet with parchment paper, set aside. In a large skillet, combine peanuts, sugar and water and bring to a boil over medium-high heat, stirring constantly. Once the mixture starts to boil, continue to stir and cook over medium heat until the water evaporates and the sugar is gooey and caramelize.
  • Continue to cook and stir the peanuts until all the sugar has caramelized and no more sugar mixture remains in the pan (it's mostly sticking to nuts). Remove from heat and immediately stir in 1 tsp vanilla extract. Spread out on your prepared baking sheet. Let cool completely and then break up nuts into individual pieces. Store in an airtight container.
