- 2 large zucchini- cut in half and sliced
- 2 egg
- 2 cup Panko Breadcrumbs
- 2 teaspoon Lawry’s garlic salt or any brand of garlic salt
- 1/3 cup grated parmesan cheese
Wash and prepare your zucchini by cutting in half horizontally and slice.
In a medium bowl add the eggs and whisk.
In another medium bowl add the breadcrumbs, garlic salt, and parmesan cheese and whisk until combined.
Dip the zucchini slices into the egg and immediately into the breadcrumb mixture. Toss the slices to cover evenly.
Continue with all slices and place in a single layer in the air fryer (you may have to do two batches).
Bake at 400 degrees for 7-8 minutes until golden brown.
