Crockpot BBQ Brisket

Ingredients

  • 3-4 lb brisket

For Dry Rub

  • 1 TBSP Brown Sugar
  • 1 1/2 tsp paprika
  • 1 1/2 tsp smoked paprika
  • 1 1/2 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp mustard
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne optional

For BBQ Sauce

  • 2 garlic cloves
  • 1 1/2 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1 TBSP Worcestershire sauce
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp pepper
  • 1 tsp mustard powder
  • 1/2 tsp cayenne (optional

Instructions

  • Mix the rub ingredients together. Using a fork, pierce the brisket and then rub the spices onto the brisket. Allow it to sit in the refrigerator for 1 hour up to 24 hours. This tenderizes the meat so the longer the better, but will still work great if you don't have the time. That is the plus side of cooking it in the crock pot.
  • Combine the BBQ sauce ingredients in the bottom of the crock pot. Then place your brisket on top and cook on low for 7-9 hours. Time will depend on the size of your brisket. I checked my 3lb brisket at 7 hours and it was at the recommended internal temp of 180 degrees.
  • Remove the brisket and let it rest for 10-15 minutes on a tray. Take the liquid from the crock pot and pour it into a sauce pan and bring to a simmer on medium-high heat. Cook till it is a syrupy consistency. It will continue to thicken as it cools.
  • Heat your grill to medium-high heat and spray your grill. Place the brisket down to get good grill marks. Then after a few minutes flip so the fatty side is down.
  • If you are basting the brisket while on the grill, baste one side and allow it to cook for 5 minutes additional minutes. Baste again and once that is caramelized, it is done. Or you can remove the brisket from the grill and add the BBQ as serving.
  • Cut your brisket across the grain and serve.
